Puff pastry stuffed with guava, mandarin, peaches, and lemon

-1 cup guava

-1 cup mandarin

-2 cups peaches

-1/3 cup lemons

-1/2 cup sugar

-1 tbsp. gelatin

-powdered sugar

Take one puff pastry sheet and cut into 3 inch squares. Dust a cookie sheet with some flour and pre-heat oven to 425F. In a medium sauce pan on medium heat cook the mandarin, sugar, lemon, guava, and peaches for 10 minutes. Stir frequently. Drain the fruit and transfer the juice to a glass bowl. Place the fruit on top of each puff pastry, it only takes about 1/4 cup for each pastry. Place the puff pastry into the oven for 15 minutes or until golden brown. Get a larger bowl and fill with ice and water. Take the bowl with the juice and place it over the ice water in order to give the mixture an ice bath. Pour in the gelatin and mix with a whisk for 5-10 minutes. The juice mixture will start to congeal. When the puff pastries are done then place the juice mixture on top and sift some powdered sugar on top.
