Chicken Stir Fry with Lo Mein Noodles

I need a wok, a large one. I don’t have one, now I’m washing a bunch of pots. Also, get ready for leftovers.

Ingredients:

Chicken and Marinade

-2 pounds chicken thigh, sliced thin
-1/2 cup teriyaki
-1/2 cup soy sauce
-2 tbsp. fresh grated ginger
-2 tbsp. rice vinegar
-1 tbsp. sesame oil
-1 tsp. sesame seed
-1 diced thai pepper
-1 tbsp. fresh ground Sichuan pepper    worldspice.com

Mix all ingredients together, cover and marinade in refrigerator for 30-45 minutes. The longer the better.

Stir Fry Vegetables

Carrots
Celery
White onions
Snow Peas
Bean Sprouts
Taiwanese Cabbage
1 egg

2 packets cooked Lo Mein Noodles.

In a large skillet or wok on high heat cook the chicken for about 7-10 minutes, stirring frequently, save some of the marinade.  Remove the chicken from the skillet and pour in the rest of the marinade and simmer for a few minutes, stirring frequently.  Place the vegetables in the pan and cook on high heat for 5 minutes. Once the vegetables are done mix the noodles, vegetables, and chicken together. Serve it!

Bagel and Cream Cheese Blend Sausage Sandwich

I found a use for the Tarragon I bought!

Ingredients:

Cream Cheese Blend

-1 cup cream cheese
-3 garlic cloves
-2 tbsp. Tarragon             worldspice.com
-1 tbsp.  paprika

Bagel Filling:

Italian Sausage, cooked.  I had to re-cook the one in the picture…….I’m not perfect.
Lettuce

In a food processor pulse together the cream cheese, garlic, tarragon, and paprika.  Spread the blend on the bagel and then put any topping you like on the inside.  The cheese blend is good by itself with no topping.

Vegetarian Sun Dried Tomato Spaghetti

The taste will linger with you for a little bit, this is a good thing.

Ingredients:

-1/2 white onion, diced
-2 garlic gloves, diced
-2 cups white wine
-1/4 cup heavy cream
-2 tbsp. sun dried tomatoes
-2 tbsp. pesto
-1 tsp. crushed white peppercorn   www.worldspice.com
-1/2 tsp. crushed red pepper flake

2 cups cooked spaghetti

In a medium sauce pan pour in a little olive oil and cook on high. Once the olive oil is hot sautee the onion and garlic. Reduce heat to medium then pour in your wine and cook for about 5-7 minutes. Stir in your sun dried tomatoes, pesto, crushed white peppercorn, and crushed red pepper flake. Reduce heat to low, cover and cook for about 15 minutes. Serve over spaghetti, enjoy.

A quick trip to World Spice Merchants:

Look out people, here come some spices and new recipes your way. I had to take some time and go to my happy place this week so I stopped by World Spice Merchants again.  I picked up some Sumac, White Peppercorn, Arrow Root, Tarragon, Coriander Seed, Adobo blend, and some Anardana.

I don’t really know what to do with a few of these so we’ll see what happens.

Been busy……..

I’ve been working a lot this week so I haven’t had much to post (creating blogs for other people, a few websites, and some marketing stuff). Luckily, we have some family in town so I’ll be working on a few experiments in the kitchen.

Lo-Mein Noodles, stir fry action

Bacon wrapped elk steak, chopped into larger chunks. More of an appetizer

Couple of salads

Maybe some egg rolls from scratch or spring rolls

Maybe a pork shoulder………..shredded pork for some BBQ sandwiches or a Pizza

Breakfast stuff.    My biscuits and gravy recipe………I have an egg concept I’m working on as well that cooks the white separate from the yolk then I stack it on top of each other with a cheese center, we’ll see how that goes.

Yellow Thai Curry with Rice and Spicy Chicken (The quick and easy way)

p2230010This is a very basic recipe, it’s perfect for a weekday. I will post the longer version later (without using the paste).

Ingredients:

-3 tbsp. Yellow Thai Curry Paste   I used this (Mae Ploy Yellow Curry Paste) Most Asian markets carry this.
-1 10 ounce can coconut milk
-2 tbsp. brown sugar
-2 cups cooked white rice
-1 boneless skinless chicken breast, cut into smaller pieces as shown in the picture above
-1 tbsp. sesame oil
-1 tsp. red pepper flake
-1 tsp. garlic powder

In a medium sauce pan on medium heat mix together the curry paste, coconut milk, and brown sugar. Let simmer for 15-20 minutes uncovered and stirring frequently (the sauce will thicken, that’s a good thing).  While the curry is cooking cook the rice in a rice cooker. Next, take your chicken and mix the sesame oil, red pepper flake, and garlic powder. Let the chicken sit for about 10 minutes. Take a skillet and put on high heat then put in the chicken and cook for about 7 minutes by this time the curry should be done and the rice should be done as well.    Mix them all together, turn yourself around, and that’s what it’s all about.

BBQ Dinner (WHAT IS THAT GREEN STUFF!?!?!!?)

Ingredients:

-Salad (the green stuff) with a few blackberries thrown in (my sister brought this over)

It started raining outside so I wasn’t able to make the BBQ thing work. I think this will be good enough.

Shredded BBQ Chicken

Ingredients:

-3 boneless, skinless chicken breasts
-My BBQ Sauce, use as much as you like.

In a large pan place some aluminum foil on the bottom then put the Chicken on top and pour some BBQ sauce over them.  Preheat oven to 225F. Cover the chicken with foil and cook for 2 1/2 to 3 hours.   Half way through the cooking remove the chicken and shred with two forks.   Once the chicken is done pour some additional sauce over it and enjoy.

BBQ Ribs

Ingredients:

-1 slab of ribs
-My BBQ Sauce (click for recipe).  Double the recipe.

In a large pan lined with aluminum foil place the ribs on top and then pour some BBQ sauce over the ribs.  Pre-heat oven to 225F.  Cover the ribs with aluminum foil and cook for about 2 1/2 to 3 hours.   Remove the foil about 15 minutes before you are done cooking and baste with additional sauce.   Serve.

BBQ Sauce

I wish my toothpaste was this flavor.

Ingredients:

-10 ounce can tomato sauce
-6 ounces molasses
-1 tbsp. white vinegar
-3 chipotle pods, ground     worldspice.com
-1 tsp. cumin
-1 tsp. ground red pepper flake
-1 tsp. dried mustard, ground
-1 tsp. paprika
-1 tbsp. dried chopped onion
-1 tsp. garlic powder
-1 tsp. salt
-1/2 tsp. dried basil
-1/2 tsp. dried oregano

Mix all the ingredients in a medium sauce pan and simmer on low heat for about 45 minutes to let the dry ingredients open up.

Corn Tortilla Nachos:

This is super easy, it’s been done a billion times, and it still gets a smile when I serve it. Yes, regular corn tortillas deep fried and served fresh, not rocket science.  Sometimes it’s about being quick and easy, this definitely fits the bill. There isn’t an exact recipe to this since nachos can have so many variations so just try it for yourself and you’ll be glad you did.

Ingredients:

-20 corn tortillas, quartered
-Canola oil
-Sharp cheddar cheese, shredded (do as much as you like)
-Tapatio hot sauce    (What is tapatio?)
-Fresh cilantro        I really love cilantro if you haven’t noticed already.
-Salt

Deep fry the tortillas in a deep fryer with canola oil until the tortillas start to darken.  Pull them and place a towel on a plate and place the tortillas on them and immediately shake some salt  on them. Once you have all the tortillas cooked place them on baking sheet and then put your cheese on top.  I like to melt the cheese then add the rest of the toppings, this way your chips won’t get soggy.   Place the baking sheet in the oven and set to broil, once the cheese melts take out the chips and put your toppings on.  Serve!!!!!!!!!!!!!!!

Pork and Potato Crisps with Chipapri Cream Sauce

This is what happens when I want some eggs for breakfast and we only have one left, stretch it out into something fun!

Ingredients:

-1 boneless skinless porkchop.  Cubed and marinated with  1 tsp vinegar,   1/2 tbsp. olive oil, salt, and pepper. Marinate for 15 minutes
-3 yukon gold potatoes thinly sliced and quartered
-1 green bell pepper, cut in large pieces
-1 egg, scrambled
-1 tbsp. pesto
-1 tsp. chipotle pepper
-1 tsp. paprika
-1 tbsp. heavy cream
-salt and pepper
-butter
-fresh cilantro

In a large skillet on medium-high heat melt 1 tbsp. butter. Dump in the potatoes and add 1 tbsp. butter every 2 or 3 minutes, this will help your potatoes get a nice golden brown color. Once the potatoes are a nice brown color place a papertowel on a plate the pour the potatoes over and let sit.  In the same pan you used to cook the potatoes pour in the pork chop and cook for 5-7 minutes on medium heat, halfway through add the bell peppers. Once the pork is cooked stir in the egg and pesto, add a little salt and pepper.   In a small sauce pan pour in the heavy cream, a dash of salt and pepper, paprika, and chipotle then cook until the mixture reaches a boil,  remove immediately (takes less than 2 minutes). On a large plate place fresh cilantro around the border. In the middle of your plate put the potatoes on the bottom, then the egg, pork, and bell pepper mixture, and finally your chipapri sauce.  Serve it.
