Corn and Roasted Red Pepper Soup (5 PEPPERS!)

p21000721Eggs, Bacon, and Soup…..It doesn’t get better. I have a cold that I’ve been battling for a week so this cleans up the sinuses a little bit. It’s not that spicy or anything (don’t be afraid of the peppers!!), it just hits the spot.

Ingredients:

-1.5 liters water
-3 10 ounce cans of whole kernel yellow corn (You can use fresh corn but this is my only option at the moment)
-1 8 oz. can tomato paste
-1 fresh jalapeno, diced               (optional)
-1 dried smoked cherry pepper pod, ground    WSM (optional)
-1 dried chipotle pepper pod,  ground  WSM (optional)
-1 tbsp. ground red pepper flake
-1 tsp. salt
-1 tbsp. fresh basil
-1 tbsp. fresh oregano
-2 tbsp. corn starch
-1 roasted red pepper
-2 hard boiled eggs
-8 strips bacon, cooked

In a large stock pot pour in the water, corn (the entire can with juice), and tomato paste. Stir until the tomato paste is completely dilluted then bring to a boil. Dump in the jalapeno, cherry pepper, chipotle, red pepper, and salt. Reduce heat to low-medium and cook for 25 minutes. Blend the mixture; you can use a hand mixer, food processor, or immersion blender.  Once the mixture is blended add the basil, oregano, corn starch, and roasted red pepper.  Garnish the soup with the egg and bacon as shown in the picture.  SERVE IT!!!!

Eric Rivera’s Cooking Blog, According to at least one study, black pepper may cause an increase in parietal secretion (of hydrochloric acid – the acid abovementioned as an aid to digestion) and pepsin secretion and a loss in potassium.
