Try this one, I promise you’ll like it. No need for a lunch today…….
Ingredients:
-5 Italian Sausage links, removed from their casing
-11 eggs
-2 green onion stalks, minced
-1/4 sprig cilantro, minced
-1 tbsp. fresh ground white peppercorn www.worldspice.com
-3 smoked cherry pepper pods, ground www.worldspice.com
-1/4 pound sharp cheddar cheese, grated
-3 mini peppers
Pre-heat oven to 375F. Take a baking sheet and place a spring board pan on top (if your springboard pan doesn’t have a good seal the baking sheet will save you some cleaning time………..yeah, I figured that out pretty quick). Spray the spring board pan with non-stick spray. Take the Italian sausage and line the bottom of the pan and place in the oven for 10 minutes. In a large mixing bowl mix together the eggs, green onions, cilantro, white peppercorn, and smoked cherry pepper pods. Remove the pan from the oven and pour the mixture over the sausage. Cook for about 35 minutes, then place your cheese and mini peppers on top and cook for another 25-30 minutes or until the cheese starts to become golden brown. Remove from oven, let rest for 5-7 minutes then serve.

4 total. hahaha! I usually just cook for myself and my wife and usually have left overs from that. I think once I was at egg #11 I realized I might be over doing it. I ran some to my next door neighbors, everyone had seconds and there is still a bit left. So I think this would feed about 10-12 people, single serving……………..
