I can’t think of a better name for this dish. My creativity was lost while cooking.
-3 tbsp. olive oil
-1 tsp. annatto seed (world spice)
-2 sausages cut into 1 inch thick slices I used Italian Sausage
-1/2 white onion chopped coarsely
-2 garlic cloves, diced
-1 tsp. coriander seed, ground
-dash of smoked paprika
-dash of fresh oregano
-2 eggs, poached
In a large pan on high heat stir in the olive oil and annatto seed together. Once the oil is starting to crackle place the sausage in as shown in the picture. Brown brown both sides then add the onions, garlic, and coriander. Cover and cook for 10 minutes, reduce heat to medium. Take off heat, serve sausage mixture on plate then place a poached egg on top and garnish with oregano and paprika. Serve!
