Greg over at Sippitysup.com has inspired me to work with mustard a little more. If you haven’t had the chance to check his site out please do, (CLICK)
Ingredients:
Toasted white bread
Alfalfa sprouts
Sharp cheddar cheese
Fried Egg
Spread:
1 avocado
1 tsp. yellow mustard seed, ground
2 tbsp. sour cream
5 green peppercorns, ground
Dash of salt
Stir ingredients for spread together then assemble sandwich as shown in picture. This would be a great dip for chips too.

Hey fyi I made this sandwich this morning. I used left over guacamole and mixed it into the sour cream mixture. It was a great variation on classic breakfast sandwich.
