Cheese Quesadilla with Chipotle Avocado and Cheese Chimichurri Sauces

This is much quicker than making a lasagna……about 4 hours quicker. :) This, as my friend Laughton says, is a “flavor explosion”.

Ingredients:

Cheese Chimichurri Sauce

Use my cheese dip recipe              (Cheese Dip)
Add 3 tbsp. Lime Riesling Chimichurri            (Sound Bites)

Chipotle Avocado

1 avocado
1 tsp. lemon juice
1 chipotle pod, ground
Pinch of fresh cilantro
Pinch of salt

Quesadilla

Flour tortillas
Pepperjack cheese, to go inside quesadilla
Yellow and Green Bell Peppers, Diced

Place a flour tortilla on a large skillet with the pepperjack cheese and bell peppers. Place another flour tortilla on top to cover then cook for 4-5 minutes then flip and cook for another 2-3 minutes.  Serve with either sauce on top or BOTH!

  6. My hubby LOVES LOVES quesadillas! And now that he knows I can make them myself rather than him ordering them at a restaurant, he hints at me to make them for him! :D
