Saffron Infused Pasta with a Juiced Vegetable Sauce

Complex lingering fantastic taste.

Ingredients:

1/2 onion, grated
4 tomatoes, grated
3 celery stalks, grated
6 carrots, grated

5 Cromini Mushrooms
1/2 Aji Mirasol Pod, ground
2 Smoked Cherry Pods, ground
1 tsp. Italian Sea Salt

1 1/2 tsp. tarragon, ground
1 tbsp. sun-dried tomatoes
1 tsp. sugar

1 lb. chicken breast, cooked and shredded.   Marinade with 2 tbsp. grape seed oil, then add a touch of salt and pepper. Cook at 350F for 25 minutes.

2 cups Saffron infused pasta, cooked  (where? what? how? Just wait, I’ll tell you soon)

In a medium sauce pan on medium heat pour in 3 tbsp. grape seed oil for 5 minutes. Stir in the onion, tomatoes, celery, and carrots. Simmer and cook for 30 minutes, covered. Stir in the mushrooms, Aji Mirasol, Smoked cherry pods, and sea salt. Simmer for another 10 minutes, covered. Stir in the tarragon, sun-dried tomatoes, sugar, and chicken. Simmer for another 5 minutes then serve.

  5. I am right there with s.Stockwell. These two sound intriguing. I’ve never heard of either pod, but I’m always open to searching the shelves or the Web for ingredients.
