I served this with scalloped potatoes with a tomato basil sauce.  My mom has a great garden with oregano, cilantro, culantro, basil, and other nice herbs so it’s awesome having access to them in the backyard instead of having to spend $1.99 for crappy plastic packaged herbs at the store.

  1. I had nearly the same breakfast today! I needed to eat up a bunch of eggs before I head to San Fran for a week, and this is almost exactly what I did. GREG

    PS I love Puerto Rico. Again childhood memories. I spent a few months there as a kid and we always passed through on our way to St. Maarten. As an adult I discovered Old San Juan and the amazing sea wall that circles the end of the island. GREG
