Breadfruit Tostones

Breadfruit or Mapen as it is called in Spanish is something that I never used before to cook with. It’s a great substitute for a potato and it’s very healthy for you, well, until you deepfry it! You can also bake it or boil it so it’s pretty darn versatile. If you can find breadfruit at your local grocery store then try these tostones first.

Ingredients:

1 breadfruit
Canola Oil for deep fryer

Cut the breadfruit as shown then place in salty water for 30 minutes. Deep fry at 350F for 4 minutes then remove, flatten, then deepfry for another 4 minutes. Ta-da, tostones!

Enjoy,

Eric
