My friend Mike has a son that just came back from Iraq so he asked me if I would be up for cooking some food for a party he was throwing. Mike told me there would be around 40 people showing up so I jumped at the opportunity. I asked him what type of food his son liked and he told me, “Mexican”, so I said I can do something like that but with a Puerto Rican twist! I’ve been planning this over and over in my head for the past couple of weeks and everything worked out just like I wanted it to. Mindy helped me out with the prep work and we both cut our fingers at different times while slicing vegetables! We rocked it!
The food turned out great according to all the people there! Hopefully this will turn into more opportunities for catering or even a restaurant position somewhere. Who wants to hire Eric????

Normally, I would say “My favorite dish is . . .” but I can honestly tell you that it ALL looks incredible!! Okay, maybe a bit of an edge goes to the Achiote Carne Asada and Dulce de Leche ice cream. 8-D
