Tarragon Tomato Mayonaise

Sauce Week!!!!

Don’t ever buy mayonaise again! It takes less than 10 minutes to make it yourself and it’s just about fool proof once you know what you’re doing. Who’s going to show you? Me.

Ingredients:

2 egg yolks
2 cups canola oil (DON’T USE OLIVE OIL)
1/2 lemon, juiced
1 tbsp. dried tarragon (optional)
1 tbsp. dried tomato, ground (optional)
Pinch of salt

In a mixing bowl whisk the egg yolks, lemon juice, salt, tarragon, and tomato until the egg yolks start to become fluffy. Slowly add the oil, about 1/4 cup at a time, then cover and place in the refrigerator. This will keep for about a week. Serve.
