Polenta Revisited

Polenta

Equipment:

  • High sided pot
  • Whisk
  • Wooden spoon

Ingredients:

  • Corn meal
  • Water   Use a 4:1 ratio
  • Soft Butter
  • Parmesan
  • Salt and pepper, to taste

Procedure:

  1. Boil water and add salt
  2. Whisk and pour in polenta
  3. Whisk until cooked to surface
  4. Switch to wood spoon
  5. Stir as much as possible for 1 hour
  6. Add soft butter, parmesan, and salt, pepper
  7. Serve soft or serve firm
