
My team rocked it last night. We were one person down and we cranked out this meal about 30 minutes earlier than everyone else in class, I was pretty damn happy about that. The presentation needs work but the flavor was all there. I would have liked the pork to be a little less done but we have to follow those crazy health department rules, oh well.
What you see on the plate is a cumin, paprika, oregano, salt, and pepper rubbed pork loin with pan gravy. Asparagus Hollandaise, Pommes Anna, and Tourne Butternut Le Etuve.
F’ing rocked it.

Side note: If you ever want to have some awesome pork then ask a Puerto Rican to cook it for you.
I know what you mean about PR pork! I was in San Juan (more than 10 years ago) and I had a simple stewed (pulled) garlic pork over black beans. I was transported into the pork loving fool you see before you today. GREG
Nicely done!!! With one man down you guys did well. I understand about the pork too. I gotta have a little pink in mine. Dang health codes!! I guess that a good thing, too. LOL.
Yeap, I have to say that pork in Puerto Rico is the best I have ever tasted. I have had pork cooked many ways and in many places, but PR pork is the best ever. Next time you visit Puerto Rico I am going to take you to Guavate, it is pork town. Anthony Bourdain visited Guavate and he loved the pork in there. It is fab when you have a good team to work with. Keep it up!
