    Hi Eric, I like the sound of this one! A bit mystified however with the referecne to black turffles. Theyare not a herb, and at the price they charge, I’m never in the position of having some extra ones lying around & going bad!

    So exactly how do you do it? Just toss some fresh truffle slivers in with the salt & hope that the aroma gets sucked out?

    The herbs I get, it really is a great idea. However I’m with Reg on the truffles. How do you get the aromas to get into the salt??

  3. In a professional kitchen this is a common way of not disposing of slivers. We get enough that it’s actually useful and when the truffle is freshly cut a little bit of the aroma will infuse into the salt. However, the yields I can get in a professional kitchen as opposed to a home kitchen are enormously different. At home I would be more inclined to use every last bit in a dish and at work I make sure every slice looks perfect on a plate then the slivers go in salt or are used in other ways. I’m just giving you options………. :)

    So i just got some Oregon Black Truffles. I want to make truffle salt for for gifts. I have 12 3 oz jars and 36 oz off sea salts. About how many oz of truffle should i use to make the salt?
