That was my nephew’s question after picking two things that I didn’t cook…….I need to learn how to make dinner rolls!!
Anyway, I’m down here in Ohio with Mindy’s family. I wasn’t responsible for making the turkey so that left room for me to make sure the sides were taken care of. I made 11 sides!
Sorry for the pictures being a little dark, I’m sure it will ruin your day.
The picture above was my showcase, it was butternut squash ravioli with a white wine reduction sauce and candied pecans.
Parmesan Crisps with a Cranberry Apple Chutney
Baked Yam Mini-Pizzas. Baked Yam medallions with a little sauce and cheese on top.
My mom’s stuffing…….None of that bread stuff….GO MEAT!
Tomatoes Duxelle. French food is genius.
Green Beans, Brussels Sprouts, and Brocolli blanched then sauteed and covered with a bechamel sauce.
Red Potatoes with Mom’s stuffing and bacon!
Butternut Squash Soup ala Sip Seattle style. Muah haha haaha
Mindy made her famous mashed potatoes!
There was also a butternut squash pan gravy, molten lava chocolate cake, and I made breakfast that morning.
Frittata Eggs Benedict with a Hollandaise served with orange supreme and raspberry balsamic reduction.
More cooking tonight!
It was nice having helpers otherwise I wouldn’t have been able to pull this off. Good stuff. They wanted to “learn”….I just didn’t want to prep on my day off
Eric

11 side dishes you are a mad man! GREG
Most of our guests were like, turkey-schmerkey — bring on the sides! The sheer number of sides you created deserves a 12-days of Christmas-like song. The 11 Sides of Thanksgiving, minus the partridge in a pear tree, because they were most likely cooked.
I’m reliving the preparing and consuming of that wonderful meal — mincing mushrooms and onions, hollowing out tomatoes and potatoes under your tutelage, tasting as we go, and finally sitting down to the feast. Can’t thank you enough for coming in the first place, and then sharing your skill, expertise, and passion for food. You are amazing, and this was a family holiday we’ll never forget!
Love, Bonnie
i want your secret for the parmesean crisp!
