Pickled Mirepoix Stuffed Slow Roasted Campari Tomatoes with Shallot Jam

So good…….that quick pickle experiment I did using David Chang’s pickling recipe worked like a charm! I’m hooked on pickling things now!

  1. Love pickled stuff. I ate a lot of pickled vegetables when I was pregnant of you. When I lived in Panama I had pickled pig feet. Sound gross, but they are delicious and spicy.
