Yum, I do love pickling. My problem with pickling vegetables is, if they were destined for another dish, they rarely make it. It kind of reminds me of that episode of the Simpsons, where Marge has to make two birthday cakes for Maggie’s birthday, one for the birthday, one for Homer to destroy with little picking bites.
