Kasu Marinated Sockeye Salmon

Tracked down some kasu paste and proceeded to marinate some sockeye.  I got this idea from the Coco book and after trying the dish with black cod st the Steelhead Diner I did a little more fact finding and found out that any type of fatty fish would work. Ginger Oil

I would eat all of the food on the palm tree plate by myself.  Mom, where did you get a palm tree plate? Pier Juan? hahahahahahahahahaahaahah Take it away mom! Hello my boy! Here is the little plate I made of appetizers we had the other day.  The cheese is Manchego cheese. All of it goes well with Medalla beer, wine or whatever you feel like drinking.  I don’t feel like writing any more.  Just enjoy the view. Chateaubriand with a Clarified Colbert Sauce, Lobster Mashed Potatoes, Sauteed Eggplant and Asparagus.

Chateaubriand in the same style as this (click) but the sauce is clarified, I didn’t like the color the first time around so I fixed it.  I seasoned the steak this time with Himalayan pink salt. The sauce was finished with a white truffle oil. The lobster mashed potatoes are a monster. Seared Scallops with a Pickled Mustard Seed Butter Sauce

In the middle of cooking dinner, friends are looking like the oysters weren’t enough, WHAT DO YOU DO?!?!?!??  I sear some scallops in bacon fat, make a sauce, garnish it with bacon, parsley, sel de mer, and keep it moving. Fennel Salad with a Tarragon Vinaigrette. Again? Yes, again. Finally plated it how I wanted it to look

Third time’s a charm or something like that.  I went from high and tight to flat to high and tight with the plating on this one.  This is the one that sticks for me. I quick pickled the shallots, used the same tarragon infused white wine vinegar, added some avocado for flavor and color, more radish, finished with Himalayan pink salt.  Everything else is the same. Had a little chorizo left over from the other day so I decided to put it to good use.  I don’t think there is a bad use for chorizo.   Chorizo lip balm, chorizo pants, chorizo light-rail system, chorizo large hadron collider, chorizo long division, chorizo chorizo (a new boy band)……. Roasted Eggplant or Tilapia with Cucumber Muscat Sweet Chili Salsa

You have two choices this evening.  Eggplant or Tilapia. I cut this salsa pretty much everyday at work so it haunts me enough to make it at home.   I did a variation of it by adding the muscat grapes and reducing it over heat to make it thicker then serving it warm.   The cucumbers are quick pickled Momofuku style.
