When Mindy and I moved to Seattle I asked a few people about some places I should check out in the area. Fresh Bistro was recommended numerous times and I was waiting for just the right time to go there. Luckily our friends Dan and Audrey just got engaged so what better time to go to Fresh Bistro.
I looked up a little more information about Fresh Bistro and I noticed someone that looked very familiar. Chef Dalis Chea worked an event that I volunteered at in West Seattle months ago. I remember he came in to serve his dish and came in with one other guy and rocked it. I knew Fresh Bistro would be fantastic, I’ve seen the guy work in the kitchen.
We all made our way over to celebrate the newly engaged couple and decided to celebrate in style.
I can’t read the label either, all I knew is that it had bubbles and it was pretty damn good. Oh this menu, let’s see……..Ummmmm we’ll have:
Shiso Crusted Honey Pecan Prawns
chili green mango pickle, candied pecans, sriracha foam
Oh, you had me at sriracha foam. THE FOAMY ROOSTER!!!!!
Ahi Tuna Avocado Mango Tartare
sesame brittle (f’ing amazing), plantains (this little Puerto Rican loves tostones a.k.a. fried plantains), lime soy pudding, chili onion oil
Yeah, this dish is a definite culinary superstar. I would rename the restaurant, “AHI TUNA AVOCADO MANGO TARTARE AND OTHER THINGS THAT ARE EQUALLY AWESOME”. I suck at naming things…..
Sweet Potato and Dungeness Crab Cakes
chipotle remoulade, salad of arugula with a sherry vinny
Ladies and gentlemen, prepare for liftoff. Sweet potato and dungeness crab cakes work better together than peanut butter and jelly. Yeah, I went there.
Moules Frites
mussels, spicy Landjaeger, white wine butter broth, sea salt truffled fries, roasted garlic aioli, ciabatta toast.
Alright, the mussels and broth are amazing then you add truffled fries!?!??!?! Yeah, Fresh Bistro.
The funny thing is that I don’t even really feel like I scratched the surface with their menu. There are so many things on it that sound amazing and I’m so happy that it’s here in my new hometown of West Seattle.
Chef Dalis Chea, amazing meal and thanks for taking the time to come by the table and greet us. I have a huge amount of respect for what you do and you’re doing it at a level where others only wish they could be at….you make it look easy, amazing.
