World Cuisine Week 1: Spain

School is back in session. Here are a few pictures from the week.  Pictured above is a Gazpacho Sevillano. Mixed Green Salad with Caramelized Figs, Roquefort Cheese, Toasted Pine Nuts, and a Pomegranate Vinaigrette. Pollo en Pepitoria……….Chicken in Almond and Saffron Sauce for all of you English speakers. Braised Molasses Mangalitsa with Tons O’ Sides and Mindy’s Lettuce

Get some lettuce from the garden that Mindy grew. Start building with the sides. First up…..  Apple Wood Smoked Fava Beans cooked in Chicken Stock 5 Hour PX S’Orange Caramelized Onions Balsamic/Fennel Peaches Emmer Finished with Beecher’s Cheese….lots of it. Cherry Wood Smoked Heirloom Tomato Sauce Eat, the food is getting cold! Lots of food here so practice plating…… Still needs work. Eric

It all starts off nice and pretty then gets progressively harder then becomes an all out frenzy with a final kissed off note to let everyone know that the night is over. Mindy’s Garden Salad and Fried Pork Chop with More Garden Delights

The lettuce and the radishes are from the garden. Cherries are from some friends of ours that picked them this past weekend.  It looks like we will have to move to California to grow black olives which I am all for. Back to the radishes….they’re sliced thin then quickly blanched and shocked which makes them translucent…..I like. MindyRiveraFarms: Food is ready!

Mindy’s work in the garden is paying off!  This is the lettuce that she started growing from seeds that is taking over its pot.  I raided a basil plant and made a pesto base sauce (it’s a concentrated version for use in vinaigrettes, butter sauces, etc…).
