Chef Brian’s Dinner

December 30, 2010 by ericriveracooks

Chef Brian cooked a dinner for the crew at chef Kevin’s other restaurant (Steelhead Diner).  He asked us to help him out with it so I brought in my immersion circulator and special scallop pounding skills and proceeded to watch chef Brian have a kitchen throw down of epic proportions. He started them off with potato chips with a black truffle and Parmesan dip that was f’ing incredible. Next up was a scallop ravioli which I pounded out and stuffed […]

Revel (Seattle, WA)

December 30, 2010 by ericriveracooks

Mindy and I went out last weekend to Revel.  I’ve been waiting for this place to open and originally had an invite to attend a soft opening for it but I had to work so instead of whining and crying about it Mindy and I went out for lunch on the weekend.  We walked in and we were the first ones there at 11AM and I immediately fell in love with the set up of the restaurant. IT’S OPEN!!  I […]

An Evening With Bob Tate & Friends

December 22, 2010 by ericriveracooks

A little over a year ago I did a post on knives after Bob Tate came to my culinary school to do a talk (here is the original post…click).  My friend, Jethro (click), knows Bob Tate and offered to get our little group of gastronauts together to go see the art of knife sharpening up close and personal. I still use Bob’s tips to this day and it was really amazing to be invited into his home where he does […]

Pintxo (Seattle, WA)

December 22, 2010 by ericriveracooks

About a month ago I went to Pintxo to check out their assault on the world of tapas.  They’re a newer restaurant in Seattle in the Belltown area that has my attention.  I’ve heard good things from friends so I finally made my way to check it out. First up on the menu for me was a meat and cheese platter. Next up was the bacon-wrapped dates stuffed with goat cheese. Finally, the show stopper.  If you ever go to […]

Palisade (Seattle, WA)

December 22, 2010 by ericriveracooks

I was invited to go check out a media dinner at Palisade in Seattle.  I haven’t been to Palisade in nearly 8 years…I think the last time I was there for a mother’s day dinner which is usually the reason people go to Palisade.  However, things have changed a bit there and there’s a new chef in town (Chris Bryant) so I went down there to check it out! First course was the salad you see above which was part […]

Brainstorming Food……

December 15, 2010 by ericriveracooks

Quick-pickled ocotopus with ikura, mung bean, satsuma zest, and green onion on tarro root crisp with japones chili oil on the outside…..re-plated this later when Mindy got home and it looked much better…still tasted pretty awesome. Scott, Jethro and I are working on a dinner for a few of our culinary heroes in February so we are brainstorming a whole bunch of ideas.  I had them come over to my place so we could brainstorm and decided to cook them […]

Life at 40,000 BTU

December 10, 2010 by ericriveracooks

I’ve been on a year long journey starting from the day that I bought a cookbook to where I am at today.  I bought that cookbook and I found the only Seattle chef (Kevin Davis) in that book then worked my way back from losing pieces of my fingers from an accident at a previous employer (wait until you see the post I have for that one) to teaching myself how to use my fingers again then moving forward to […]

Michael Coffey Schools Me on Tea

December 2, 2010 by ericriveracooks

Twitter strikes again! The other day I was talking about gobble day, immersion circulators, and all this is awesome when Michael Coffey stepped in and asked me a quick question about how much time my culinary school spent on tea.  I pretty much summed it up by saying that we only spent a paragraph or two on it at school but I wanted to learn more. My only experiences with tea have been when I lived in Texas and Louisiana […]

Life at 40,000 BTU: Salmon in The Trees Event.

December 2, 2010 by ericriveracooks

Sometimes they let me out of the restaurant….. A few weeks ago chef Kevin asked me to work an event held at the Burke Museum on the University of Washington campus for a book release by Amy Gulick. Her book, “Salmon in the Trees: Life in Alaska’s Tongass Rain Forest”, showed her journey through Alaska while she snapped photos of wildlife in the Tongass Rain Forest. Buy her book here (click) I was asked to serve a geoduck ceviche which […]
