Roasted Celeriac, Cippolini Onion, Artichoke, Fiddleheads, and Foraged Edibles

April 26, 2011 by ericriveracooks

Would like to plate this as smaller pieces instead of family style.  Sauce went on top…need to work on sauce aesthetics. Eric

Foraging

April 23, 2011 by ericriveracooks

So, I’ve started foraging for things a.k.a. the hipster way of saying, “I’m taking the dog for a walk”.  I’ve been doing a bit of research online and I bought a couple of books so hopefully I won’t end up in the hospital because I eat something weird. Nothing to eat there but the beaches are my next visit.  I’m going to start looking for seaweeds and anything else I can work with but until then here’s my haul for […]

Fresh Bistro (Seattle, WA)

April 22, 2011 by ericriveracooks

Mindy and I had a date night the other night at Fresh Bistro.  We have both been extremely busy and it has been a while since we had a chance to just sit and relax so we went to one of our favorite restaurants in Seattle (Spur is the other, just in case you’re wondering).  We love Fresh Bistro, it’s our go-to place whether it’s for Brunch, Lunch, Dinner, or a late-night happy hour session.  Since we live in West […]

Pickled Serrano and Dark Soy Sauce Beef Jerky

April 19, 2011 by ericriveracooks

First, slice your meat. Then marinate your meat for 24 hours in a sexy sauce.  After meat is sexy sauced then place it on the dehydrating racks and dehydrate for 12-16 hours @100F. Wake up and it’s jerky time! Eric

Guest Blogger- Kimberly: If You Write, You Should Be Here

April 18, 2011 by peasonmoss

It goes something like this: you and your closest girlfriends are sitting around at a table. You’ve brought your signature dish. They’re busily and hungrily diving into the delectable treasure, eating like greedy, starved pirates. Between bites, one entrepreneurial friend declares that you should publish the recipe. Not be left out, your other friend announces that you should publish a cookbook! You three laugh and agree. I mean, how hard could it be to write a cookbook? You’ve already got the […]

Copenhagen, Denmark (The Noma Experience: Part 1)

April 13, 2011 by ericriveracooks

I spent a week and a half in a city working in a restaurant that has completely changed my approach to food, organization, and goals in life. Back in October 2010 I attended a book event here in Seattle where Rene Redzepi, chef of Noma the best restaurant in the world, was launching his cookbook highlighting signature dishes from the restaurant.    From the original post: I looked at the price of the event and I had to think about […]
