Australian Sausage Rolls

Another Australian dish- Sausage Rolls, again great for party’s, today though it was just for me. It was almost up to 80 degrees here in Seattle and my condo get’s hot. 2nd floor, afternoon/evening sun blaring in, it was almost too hot to turn the oven on. These were worth it.

1/2 Jimmy Dean’s Regular Sausage, 1/2 Jimmy Dean’s Sage Sausage, italian seasoning, Puff Pastry, 1 egg

Preheat over to 425, Combine both sausage flavors together with 3 tbs of italian seasoning, roll out puff pastry  and spread sausage all over puff pastry, roll, spread egg over the outer layer of roll, slice, place on cookie sheet, and bake for 12 minutes or until golden brown.

Enjoy with ketchup or your favorite dipping sauce.

In honor of our fabulous Sounders I made these oh so easy, simple treats, that I was actually a little weary of at first but the overall reaction to them were good, especially with the Sounder Fans. These are called Fairy Bread, an Australian treat usually big at children parties. One of my best friends is from Australia, and I’m always asking her about the food, and inquiring on the dishes she creates from home. 

I’m a routine cook, I cook what’s easy and I get into a bad habit with cooking the same “bland” foods literally on a weekly basis. And what I do know I’ve learned all of it from my wonderful friends, who I call upon daily for “how to’s” with anything I cook. But these are simple and tasty. And you don’t have to cook them. Australians though I’ve noticed pile alittle more sprinkles than I thought I could handle but after taking a bite, alittle more sprinkles would of given it a bit more sweetness to the crunch. So simple, I asked my daughter, Charley to join in on the action, and so I could watch the game. She was great help.

Just butter, sprinkle and eat. So simple my daughter made them all by herself. Not a bad treat actually, wasn’t sure how I would like it, but overall I’ll make it again.

CUPCAKE POPS (from Bakerella)

These are great for everyone, a big hit at showers and birthdays. Warning they can be time consuming, I recommend having either a full day or preparing them a few days prior.

makes about 40 pops

1 13X9 baked cake- any chocolate ones (from a box cake mix, because if you’re like me you don’t have the time)

1 can cream cheese frosting

1 flower shaped cookie cutter (1.25″ wide X .75″ tall)

1 package pink candy melts

1 small package m&m’s

bowl for dipping

wax paper

aluminum foil

lollipop sticks

sprinkles

styrofoam blocks

Bake cake as directed on box and cool completely. Once cooled, crumble cake into a large bowl, I used 2 large forks and just shredded the cake till it was all crumbled. If you have kids, this part is great for them to do. Start adding the cream cheese in and mixing with the back of a spoon until it is all blended and you have no dry cake crumbles. Start rolling the mixture into 1.25″ size balls and place on wax paper cookie sheet, after about the 8th ball your hands become very sticky, just rinse, dry, and start again, and repeat as many times as needed till you have rolled all the mixture. Cover with aluminum foil and place in freezer for about an hour. Remove the tray, grab a ball and slightly roll into an oval shape that you will then slide the cutter over the bottom half of the oval and shape the top half round. Carefully remove cupcake shape from the cutter and place back onto the waxpaper. Continue until all balls are cupcake shaped. This is the time consuming part. If you prefer to not do this part, just use your ball shapes instead. They still look great too. Once they are all done, cover and place in freezer for 30 minutes. While the cupcakes are in the freezer this is a good time to slowly start melting down the pink candy melts. I used a small bowl and fitted atop of a pot filled with 1/4 of water to steam melt my candy. Stirring occasionally. Once my 30 minutes are up, take your lollipop stick dip the top into the bottom of your cupcake, and dip the top of the cupcake into the melted pink candy mixture. Be sure to cover all of the top, from there place m&m ontop and sprinkle with sprinkles. To dry stick the lollipop into the foam board to dry. Repeat.

Now once I’m finished I like to place them in the fridge until ready for consumption.

The outcome is soft, gooey, chocolatey, crunchy, delishesness, and you can never eat just one.
