Flat Chipotle Chicken

p2160112p2160114This works well with a salad, pizza, taco, or anything you can think of. Hell, eat it by itself!

Ingredients:

-1 chicken breast
-2 chipotle pods, ground                 worldspice.com
-1 tsp. dried chopped onion
-1 tbsp. extra virgin olive oil  (you’ll never get me to abbreviate extra virgin olive oil)
-1 tsp. garlic powder
-1 tsp. Utah Basin Salt          worldspice.com

Lay down a piece of ceran wrap and throw the chicken breast on it and place another layer of ceran wrap  on top then pound it down until you get about a half inch piece of chicken breast ready to turn into something awesome.  In a small bowl mix together the chipotle, chopped onion, olive oil,  garlic powder, and salt. Put the chicken in a pan and rub the mixture over the chicken (get your hands dirty!).  Take the chicken in the pan and place in the refrigerator for 25-30 minutes, make sure you cover it.  Take the chicken out of the refrigerator and get a large skillet and pour some extra virgin olive oil and set the burner to medium high heat.  Once the olive oil heats up place the chicken on and cook for 3-4 minutes on each side (there is no exact science here, just make sure the chicken is cooked through).   Let rest then eat!

Spinach Salami Mozzarella Sauce (not very good at naming food)

Ingredients:

-3/4 cup dried salami
-8 ounces mozzarella
-1/4 white onion
-2 twigs fresh rosemary
-10 ounce can stewed tomatoes
-1 cup tomato sauce
-2 garlic cloves, minced
-1 cup spinach
-1/8 cup green onion, diced
-salt and pepper to taste
-olive oil

-2 cups cooked penne pasta

In a medium sauce pan on medium heat put in the salami, white onion, a splash of olive oil, and garlic. Cook for 10 minutes stirring frequently. Next, add the tomato sauce, stewed tomatoes, rosemary, salt, and pepper. Cook for 15 minutes stirring frequently, reduce heat and cover. Finally add spinach and cheese. Cook for another 15 minutes stirring frequently.   Make sure all the cheese has melted before you serve. Pour over penne pasta and enjoy.

Red Wine Pasta Sauce

This is any easy pasta sauce that doesn’t take much work. It’s nothing special but it’s a quick and easy sauce you can make in under 45 minutes.

Ingredients:

-1 zucchini, chopped in big chunks
-1/2 onion, sliced thin
-1/4 cup tomato sauce
-1 can tomato paste 8oz
-1 can stewed tomatoes
-1/4 bottle red wine, use something you like
-1 tsp Italian seasoning
-1 tbsp paprika
-1 tbsp pesto

Saute the onions and zucchini in a medium sauce pan. Pour in the tomato sauce, paste, stewed, and wine.  Heat for 15 minutes on medium-high heat, stirring frequently.  Add the italian seasoning, paprika, and pesto. Cook for another 10 on medium heat.

Serve over pasta.
