Oven Roasted Chicken Served With Spicy Creamed Corn and Black Bean Fire

Mindy is off her medication so she is able to eat spicy foods so she asked me to make some spicy food! Woo hoo! This plate is also a celebration because I am starting culinary school tomorrow so I went a little overboard with the presentation. I’m ready to go baby, lets do this!

Ingredients:

Chicken

2 boneless skinless chicken breasts
Sel de mer
Tellicherry Black Pepper

Salt and pepper the chicken then place in the oven and cook at 200F degrees for 25-30 minutes or until you reach the right temperature (165F).

Creamed Corn

Fresh Corn
Heavy Cream
Turmeric
Chipotle Pepper

Take a small sauce pan and cook the corn, heavy cream, and pepper for 7 minutes stirring frequently then place in a blender then strain.

Black Bean Fire

Black Beans
Heavy Cream
Cayenne
Dried Habanero

Take a small sauce pan and cook the black beans, heavy cream, and peppers for 7 minutes stirring frequently then place in a blender then strain.

You see how I put it together………do it that way or do it your own way.  I served it over some white rice with a custom red pepper flake mixture (Aleppo, Cascabel, and Guajillo peppers).

Something like an Eggs Benedict, not really

I don’t know what to call this. I wanted to make an eggs benedict but I wanted to change things, as always.

Ingredients:

Ham

Cut uncooked ham into 1/2 inch slices
Brine with  1/2  cup sugar, 1/4 salt, and 1 gallon water for 3 hours           BRINE?!?!!

3 tbsp. honey
1 tbsp. fresh ginger                mix with honey

Pat dry the ham once you remove it from the brine.  Pour 1/2 tbsp. olive oil in a large skillet on high heat. Place the ham in the skillet and cook for 3 minutes then flip. Pour the honey and ginger mix over the ham. Cook for three minutes then remove from heat.   The ham is now glazed!

Coconutdaise

1/2 cup coconut milk
4 egg yolks
1 tsp. urfa biber
1 tbsp. yellow mustard seed, ground with a tiny bit of vinegar
1 tsp. garlic salt
1 tsp. Italian Sea Salt
1 1/2 tsp. ground tarragon

Combine all ingredients together in a medium sauce pan. Cook and reduce mixture by half, stirring frequently.

Poached Eggs

Arrange all ingredients as shown in picture. Serve with a little pink peppercorn over the top.

Fudge and Lavender Cheesecake

p1250019p1270033I’ve created a monster. Don’t think about how many calories are in this or if it is good for you. It’s dessert, of course it’s good for you.

Ingredients:

Fudge

-1 bag Godiva milk chocolate
-1 can condensed milk
-1 tbsp melted butter

Cheesecake

-1 stick cream cheese
-1 can condensed milk
-1 cup whipped cream
-1 tbsp vanilla extract
-4 tbsp. lavender reduction

Get a springboard pan and put a layer of shortening all around the inside.

Steep 5 tablespoons of lavender for 15 minutes. Take the liquid and heat in a small sauce pan on high heat for 10 minutes or or until 50% percent of the liquid is gone (lavender reduction).

In a mixing bowl mix the cream cheese until fluffy. Then stir in the condensed milk and vanilla extract slowly. Then fold in the whipped cream. Set aside.

In a medium sauce pan heat up the chocolate on low heat, stirring constantly. Once the chocolate is melted pour in the condensed milk and butter. Stir together and pour in springboard pan and place in refrigerator for 35 minutes or until the top of the fudge starts to get hard.  Pour in cheesecake mixture, cover, and place in freezer for 2 hours.  Once the cheesecake is set then it is ready to serve.

Next time I make this I will make it in smaller glass serving cups instead of a springboard pan.

Tostones with Seared Ahi Tuna

-2  4 ounce Ahi Tuna fillets

-1/3 cup soy sauce

-1 tbsp fresh ginger, microplaned

-1 tsp. crushed red pepper

-1 plantain

Tuna-Combine the soy sauce, ginger, and red pepper. Marinade the tuna for 15 minutes with the previously combined ingredients. Cook on high heat for 2-3 minutes on each side.

Tostones- Cut a plantain in 2 inch slices.  Place slices into a deep fryer for 5 minutes. Take plantains out and flatten them then place back into the deep fryer for another 3 minutes.

Place tuna on top of tostone. Enjoy
