Mindy is off her medication so she is able to eat spicy foods so she asked me to make some spicy food! Woo hoo! This plate is also a celebration because I am starting culinary school tomorrow so I went a little overboard with the presentation. I’m ready to go baby, lets do this!
Ingredients:
Chicken
2 boneless skinless chicken breasts
Sel de mer
Tellicherry Black Pepper
Salt and pepper the chicken then place in the oven and cook at 200F degrees for 25-30 minutes or until you reach the right temperature (165F).
Creamed Corn
Fresh Corn
Heavy Cream
Turmeric
Chipotle Pepper
Take a small sauce pan and cook the corn, heavy cream, and pepper for 7 minutes stirring frequently then place in a blender then strain.
Black Bean Fire

Heavy Cream
Cayenne
Dried Habanero
Take a small sauce pan and cook the black beans, heavy cream, and peppers for 7 minutes stirring frequently then place in a blender then strain.
You see how I put it together………do it that way or do it your own way. I served it over some white rice with a custom red pepper flake mixture (Aleppo, Cascabel, and Guajillo peppers).
