Scallops & Potatoes, Version 1.0

The scallops I bought from a store were absolutely atrocious, nothing close to the ones I get in the restaurant.  I need to nail the size of the potato and scallop.  Honey comb in the middle is nice and the muscat/orange vinaigrette was nice as well.   Buy better scallops and fix potatoes then there might be something here.

Scalloped Potatoes…..I never had them until about a year or so ago……I thought I was going to get scallops and potatoes…..I was disappointed.

Berries and Cheese, Version 1.0

Blueberry gel was too thick….too much xanthan gum.  Rainier cherries, fromage blanc, ciabatta toast, lemon verbena, arugula flowers, strawberries, and blueberries.   Just needs a little cleaning up.

Grape Tomato on Fire!

This is a grape tomato concasse.  The skin is left on and pulled up in order to give it the effect of fire when the photo was taken.  I saw this in Michel Bras’ book, he roasts them as well which gives a pretty awesome effect as well.

While Scott was over we tried another effect of dropping flowers which worked pretty well and with a little more time I think we’ll perfect it.

Roasted Celeriac, Cippolini Onion, Artichoke, Fiddleheads, and Foraged Edibles

Would like to plate this as smaller pieces instead of family style.  Sauce went on top…need to work on sauce aesthetics.
