An Evening With Bob Tate & Friends

A little over a year ago I did a post on knives after Bob Tate came to my culinary school to do a talk (here is the original post…click).  My friend, Jethro (click), knows Bob Tate and offered to get our little group of gastronauts together to go see the art of knife sharpening up close and personal.

I still use Bob’s tips to this day and it was really amazing to be invited into his home where he does the knife sharpening and has honed his own skills. He trained under Bob Kramer who has his own signature series for Shun so it was honor just to be around Mr. Tate to at least get a glimpse into the mastery that is knife sharpening.

We each brought a knife for Bob to sharpen for us…… Seriously Jethro…..a pink knife?!?!?!  Uh….. Anyway, Scott brought his shiny Shun knife (middle) and I brought my money maker Mercer knife (right) for a little honing and sharpening action.

Bob showed us a few new projects he was up to and how he can create serrated knives and even sharpen them.  It was amazing to watch him take a $2 knife and turn it into something usable and extremely sharp…..Eric “likes” the degree of sharpness.

I have a really weird attachment to my knife. It’s not expensive or special but it’s been along for the ride while I’ve moved through and cut thousands of things with it.  When I first started using it I had no idea what I was doing…..it was too big……it was heavy…..it wasn’t my 7 inch santoku that I was used to using.  I stuck with it and now I treat it like a really great friend of mine.  I sharpen it myself because I don’t trust anyone else to even touch it but when I was in the home of Bob Tate I let him have it……I guess it’s kind of like dropping your kid off at a baby sitter…..weird stuff.

Bob sharpened up the pink knife and while I saw him doing it I noticed how he moved the knife over the belt gently.  He asked me not to film his finishing process and not really talk about it since it was something he had learned from Bob Kramer and it really is the difference from him doing something amazing or just entrusting your knife to that random clerk at that one store with the French name downtown.

He finishes and tests every knife by doing the newspaper test.

That folks, is the sharpest pink knife in the world!!!! He finished Scott’s knife and my knife and it was like picking up your dog from the groomer….looks new….smells nice (what?)……knife is all excited to cut stuff……

No matter where I go, where I cook, or what knife I buy, Bob Tate is my knife sharpening guy.

Swiss Diamond 10″ Fry Pan: I love it

About a month ago Stacy, from Swiss Diamond, contacted me and asked me if I wanted to try out their new nano-composite diamond technology pans. I paused a little because frankly, I don’t use non-stick pans.  All my pans/pots are either stainless steel, aluminum, or cast-iron.

My experience with non-stick pans has always been mixed.  They work for the first few months then become a non-functioning hard to work with piece of garbage that gets thrown away quickly (I’m not the type of person that likes to keep things when they don’t work properly, the second that I don’t have the same performance I started out with then I get it fixed or toss it).  I cook a lot so having a piece of equipment hold me back is something I don’t have patience for.

I asked Stacy to send me the pan over and I immediately went on a rampage in order to try and break it down. It was free for me and honeslty the retail price for this costs more than almost all my pots combined so why not try to put the Ferrari to a speed test?   I blackened food with it, high heat sauteed then threw the entire pan in the oven to finish cooking, let my roommates try it, put it in the dishwasher, and even scraped the top with a metal spoon.  The damn thing still performs beautifully.

The thing that brought me even closer with this pan is when I had my accident at work.  I’m stuck at home for a while and those cast iron pans are really heavy to flip food on and maintain….too many steps to follow.  I have had to put them away and go simple. This Swiss Diamond pan has become my favorite without question.  The handle is ergonomic and I feel like it was molded for my hand to fit perfectly….it’s quite amazing.   The best part is that once I’m done cooking I just give it a quick wipe and it’s ready to go for the next kitchen experiment. Pretty much everything you have seen on this site over the past week has been cooked with this pan exclusively and if I didn’t have it then I wouldn’t have been able to present as many dishes.

I love this pan. It will always have a special place in my heart. I started out trying to destroy it but now I want to take care of it and call it my own…..it’s helped me out a lot and I am so happy that Swiss Diamond sent me this pan. It’s been a sanity saver. :)

If you’re in the market for a non-stick pan then give Swiss Diamond a try. They’re on the higher end of price but it’s totally worth it.  If you need one non-stick pan then make sure it’s a Swiss Diamond.

Oh yes, there will be sausage!

Mindy’s mom and dad got me this for Christmas…. Yes, I know it’s  a little early but we did the whole exchange gifts deal for Thanksgiving.  It’s taken me this long to post about it, I feel like an ass.  Don’t worry Eric……you can fix all the things you have done wrong by making sausage for everyone…….Really?  Yes….

I want to make Linguica, Andouille, Morcilla, Turducken Burgers, EVERYTHING!!!!

Custom Made Spice Rack. Family Is A Good Thing

My wife’s dad is a genius with his hands. While he was here I told him about an idea I had for a spice rack that I wanted one day. I checked my mail today and lo and behold, there it was…..the perfect spice rack. I really am a lucky guy. There are so many people that are behind the scenes for this blog that are giving me encouragement and positive words that make me push forward to create something great.

Microplane

One of my favorite tools to use in the kitchen is a Microplane. It is a smaller handheld grater than you can purchase that is easy to use and doesn’t require a lot of space to store. I use it for grating cheese, ginger, zesting fruit, and many other things. Without going into an infomercial and getting Vince from Shamwow or Billy Mays to yell at you please visit this website, (LINK) and visit their selection.
