Brickyard Bar-B-Q (West Seattle, WA)

March 9, 2010 by ericriveracooks

Will work for food.  Yes, I’ll even do yard work.  I can’t afford to eat at all of these places without a little help here and there.  My sister and her husband Dave were clearing out a little patch in their backyard for a “dog park”. Mindy and I showed up and helped them out then they suggested lunch……I love that system.  Originally they suggested Duke’s but it was a nice day and it’s on Alki so it would have […]

Traeger Grill

August 16, 2009 by ericriveracooks

The house where we cooked the pig had this interesting tractor looking Traeger Grill. I thought it looked pretty cool so I took a picture, click. I want a Traeger Grill one day but I can do without the tractor theme. Traeger grills are pellet powered and they can smoke and do regular grilling….cool stuff. Eric

North Carolina Style Pig: Episode 2

August 15, 2009 by ericriveracooks

(Click each picture to make it larger) This is my second invitation to join Richard and Fuzzy on one of their North Carolina Style Pig Cook Outs. This is the last one of the year for them so they asked me a few weeks ago if I wanted to come and of course I said yes! You say pig, I say where let’s cook it! Things were a lot less intense than last time. Instead of doing 175 lbs. of […]

Cheese Stuffed Peppers

July 15, 2009 by ericriveracooks

I’ll grill just about anything but one of my favorite things to grill is peppers, especially stuffed with cheese! I stuffed the jalapenos with a fromage blanc (unpasteurized cow milk cheese). The fromage blanc is the perfect balance for spicy kick in the mouth jalapeno. I stuffed the red peppers (they are sweet and not too spicy) with my marinated mozzarella balls. The marinated mozzarella adds texture to the sweet peppers. Slice them, stuff them, grill them and eat them! […]

I think before Richard finished saying, “we’re going to cook a whole pig”, I jumped in and asked if I could help. I was anxiously waiting for 3 weeks for this to happen and […]

May 22, 2009 by ericriveracooks

(Click each picture to make it larger) Pinchos, Kabobs, meat on a stick or whatever you want to call it, it’s all great! In Puerto Rico you will find a version of pinchos no matter where you go and they can be purchased 24 hours a day, usually it’s bar food or street food.  This is collaboration of pinchos. My mom marinaded the chicken and I marinaded the pork. Mom’s Chicken Pincho 2 lbs. chicken thigh with almost all the […]
