Berries and Cheese, Version 1.0

July 2, 2011 by ericriveracooks

Blueberry gel was too thick….too much xanthan gum.  Rainier cherries, fromage blanc, ciabatta toast, lemon verbena, arugula flowers, strawberries, and blueberries.   Just needs a little cleaning up. Eric

Mangalitsa Speck Penne and Cheese

July 26, 2010 by ericriveracooks

Base sauce is a heavy cream bechamel with a ton of Beecher’s cheese and some rendered fat from the speck. Seasonings are in play here but nothing more than salt, black pepper, and crushed red pepper.  Penne is cooked al dente then stirred in the sauce to finish….more speck is added to the mix.  Contents are removed from pan then placed in ramekin then more speck and cheese is placed on top.  Placed under broiler then brought out and torched […]

Black Pepper Cherry Sauce over Fromage Blanc

July 2, 2010 by ericriveracooks

I was at the Queen Anne Farmers Market yesterday scoping out the demo. tent for my August5th extravaganza and I stumbled upon these cherries.   With one more stop at the Mt. Townsend stand to pick up their Fromage Blanc I quickly went home to make the sauce.   It’s simple.   Pit the cherries, heat them up on low heat until they break down a little bit then add some sugar (optional, black pepper, and just a touch of salt then cool […]

Dairy Tasting 101

May 21, 2010 by ericriveracooks

Aw yes, my sometimes least favorite friend, dairy.  I’m lactose intolerant but that won’t stop me from eating/drinking dairy products….I just eat/drink small amounts.   When I was presented 30 cups I was a little scared but I fought through it and ended up finding a couple favorites! There were people in the class that didn’t even try one thing because of their issues, me, I’m up for it and I’ll pay for the consequences later…. again, I found some […]

Pork Tenderloin Nachos

December 23, 2009 by ericriveracooks

My friend, Dolan, came over yesterday and helped me bottle all the coquito I made. I told him to come over so we could play video games but I had to do a little cooking…..saved me so much time but I felt like I tricked him into helping me….muah ha ha my plan worked! He’s not old enough to try the coquito so I made him some nachos instead.  I think it was a fair trade Ingredients Pork Tenderloin rubbed […]

Orzo and Cheese

November 15, 2009 by ericriveracooks

Oh yeahhhhhhhhhhhhh.  I had some cheese in my fridge that I wanted to make into something awesome so I chose this. We made a bechamel mac and cheese in class but I didn’t want to use macaroni in this because the last thing I want is anyone thinking this is the average mac and cheese…..so I used orzo instead of the traditional elbow macaroni and used real cheddar cheese…not that yellow processed garbage.  I know I sound really snobby right […]

Weeble Cheese Reduction Sauce for Macrina and Hightower Cellars Bread

November 13, 2009 by ericriveracooks

The folks over at Macrina and Hightower Cellars sent me over some of their new bread so of course I decided to make it even more awesome than it is by adding a little cheese with that wine. The bread is fantastic and doesn’t need this cheese reduction sauce but if you ever want to add a little something extra to this bread then here it is. Thanks again Macrina Bakery and Hightower Cellars. Macrina Bakery (click)   Highland Cellars (click) […]

November 3, 2009 by ericriveracooks

I just received a rather large amount of cheese in the mail courtesy of Alouette! If you want to come then just e-mail me and I’ll give you more details about time, directions, and what you need to bring…..no money…just wine! I […]

Beecher’s Handmade Cheese: Seattle, WA

October 6, 2009 by ericriveracooks

Had an hour to kill before my next class so I quickly walked over to Beecher’s Handmade Cheese. This is not my first and it won’t be my last encounter with Beecher’s. You may remember me talking about Maximus/Minimus/Awesomus (click) a few months ago……well, Beecher’s owns that little truck of awesomus.  The next time you visit the little truck and wonder, “Damn, this cheese is good where can I buy it from?”. Now you know! I love the layout of […]

B.L.T.

October 1, 2009 by ericriveracooks

Knock down, drag out, punch you in the face awesomeness. Last week I stopped by The Swinery and picked up some bacon dogs and after about 5 minutes of stomach storming (brain storming) I decided I would make their bacon dog the center of a B.L.T. style hot dog. The bacon dog itself is made out of local beef and their own bacon. How cool is that?!?! This B.L.T. has a lot of stuff going on with it. Not only […]
