Roasted Garlic Infused Exra Virgin Olive Oil

March 22, 2010 by ericriveracooks

I’m going to infuse everything.  Why? Because saying the word “infuse” sounds like I’m doing something hard when I’m doing something simple.  “Infusion of this this and this”.   You say, “Oh wow, sounds amazing”.   See how that works?!?! Here is a little infusion of extra virgin olive oil and roasted garlic.  Toss peeled garlic in a little bit of the oil then slow roast it at 250F for about 45 minutes, let cool, then toss it in a jar with […]

Garlic Salt

July 24, 2009 by ericriveracooks

Don’t ever buy garlic salt again. It doesn’t get much easier than this. Take a clove of garlic then mash into a nice paste with a knife or place it in a mortar and pestle then grind it down. take the clove of garlic then mix it together with 1 tablespoon of kosher salt. Ta-da, garlic salt. It will keep for a week and is much better than the stuff you buy in the stores. If you’re like me then […]

(Click each picture to make it larger) Travel to Puerto Rico, NOW! I’m a little biased but let me just explain something to you. This place is what dreams are made of, especially for a culinary obsessed person like myself. It’s a land where everyone can cook so you hear tips, techniques, and you have access to ingredients that are amazing. Case in point; Aji Dulce and Wild Oregano. What do I do? I make hot sauce baby…….it’s what I […]

Bachelor Dude Food, Day 2: Garbanzo Veggie Rice

May 9, 2009 by ericriveracooks

(Click each picture to make it larger) This is completely inspired because of my mom. She taught me a few things in the kitchen these last 27 years and everyday I’m getting better and better because of her guidance. I call her every once in a while just to brain storm ideas for things I should make next. I always try to make things extravagant but she brings me back to earth. Thanks mom. Ingredients: 1 red bell pepper 1/2 […]
