Naga Viper

January 21, 2011 by ericriveracooks

I like playing with fire. Spicy food is something that I really love and there aren’t many people out there that share that same passion for spicy food as I do.  Sure, there are people that say, “I like spicy food”, and then I cook them something and they can’t handle it because it’s “TOOOOOOOO SPICY”.   I back down from the level of spicy kick now when I cook for people who want spicy food then they say, “Well, […]

September 7, 2010 by ericriveracooks

Audrey and Dan came over to our place in West Seattle so I decided to cook a few things for them.  Audrey loves spicy food and so do I so it was me and her versus Dan and Mindy and the cook always wins so spicy was the theme! Adobo spiced cheddar cheese Fried Corn with a brown butter chipotle sauce……Trying to perfect my technique for work! Pique Coleslaw! U.S. Wild Caught Shrimp in a pickled red pepper sauce with […]

Pork Belly with Doble Diablo Sauces (making up names is fun!)

December 15, 2009 by ericriveracooks

I was so excited to eat it that I didn’t really bother to take a nice picture.  The doble diablo sauces are two sauces that by themselves aren’t that big of a deal but together are transformed into the doble diablo!   Sriracha with Ghost Chili paste (red sauce on the plate) and a blonde roux based sauce (made with the pork fat in the pan…I poured it over the top of the pork belly once it was done) with saffron, […]

Ghost Chili Jerk Chicken with Red Beans and Rice

September 30, 2009 by ericriveracooks

Feelin’ hot hot hot. I’ve been waiting a long time to use my ghost chili paste. I finally had the chance to use it with this recipe and it definitely set this chicken on fire in more ways than one. If you use the ghost chili properly you can get the right amount of fire and at the same time get a nice fragrant taste/smell to your cooking. Finding the right balance is the difficult part so I won’t bore […]

Ghost Chili Paste and Aji Dulce Hot Sauce

June 23, 2009 by ericriveracooks

The new camera is doing some good things already! Both of these are a work in progress. The paste is using the hottest peppers in the world and the vinegar based aji dulce is using seasonal peppers found in Puerto Rico from my secret source. These two sauces are about as rare as they get! I’ll let you know how they turn out once they get a chance to set for a few days. Ingredients: Ghost Chili Paste 8 Ghost […]

The Ghost Chili:

April 10, 2009 by ericriveracooks

Bhut Jolokia is the hottest pepper in the world.  I just bought some today from World Spice. Normally they vacuum seal the spices and put them in a paper bag. Normally I drive my car with the spices in the passenger seat (yes, I consider my spices a carpool participant). Normally I don’t have to pull over on the side of the freeway and throw the entire bag in the trunk of my car.  Normally my eyes don’t turn red […]
