Roasted Chicken with a Mango/Togarashi Glaze with Ginger Rice and Yellow Bell/Carrot Topper

May 6, 2010 by ericriveracooks

I had some of that honey mango puree leftover from the scallop “carpaccio” so I decided to make it into a glaze to put on some chicken.  ”Wow Eric, you’re like McGyver in the kitchen without things going all explody time. The glaze started off with a little chicken stock then I reduced it, added togarashi, added cornstarch then finally added the honey mango puree.  I used the glaze on the chicken and to cook the carrots and yellow bell […]

Scallop “Carpaccio” with Honey Mango Puree and Pickled Mango Relish

May 5, 2010 by ericriveracooks

This is a good one!!!!!! I have been on a great ride over the last 24 hours. A lot of great things have happened and the best thing is that I don’t feel like it’s over or even close to accomplishing my goals.   I’ll get into more details soon but for now just enjoy this little plate of awesome. I took some scallops and thinly sliced them then “cooked” them in an orange juice and lime mixture.   The […]

Fall Apart Pork Lettuce Wraps with Cilantro Lime Rice and Pickled Delights

April 25, 2010 by ericriveracooks

Read something, get inspired, make something your own.  I am obsessed with David Chang’s Momofuku book.  It’s given me a great jump start into the crazy world of pickling and he has taught me to never look back at the food I made a month ago, yesterday, or right now.   He talks about how people question his motives for putting out his secrets in a cookbook and he simply responds by saying he’s going to move forward….good stuff. Well, he […]

That’s not a mango. This is a mango!

July 17, 2009 by ericriveracooks

(Click each picture to make it larger) E-mail from my mom: “My cousin Annette and her husband Eli came over last Saturday to visit us and he made for breakfast a fruit salad with delicious fruits from here (Puerto Rico).  Look at the size of the mango he brought.  We made goulash soup with things he brought from Germany.  He goes to Germany quite often and game me some of the tomato paste, mustard and mayonaise that comes in tubes.  […]

You know what I’ve been doing while I’m here??

May 19, 2009 by ericriveracooks

I’ve been making batches and batches of this mango-pineapple dressing.  It’s mango and pineapple season here so my mom’s friend, Gloria, asked me to make her some. I’ve had a few people try it and they have been blown away. The fruit here is so good that it takes this dressing to a whole new level.  My mom’s friend brought a bunch of mangoes and pineapples and I have created a factory inside my mom’s kitchen. 2 gallons later, mango-pineapple […]
