Veal Stock Soba Noodle Soup

May 18, 2010 by ericriveracooks

It’s nasty outside….have some soup! Sauté some onions, zucchini, then add veal stock and cooked soba noodles.  Add those pickled sweet chili pepper flakes (this is the key!),  small amount of rice vinegar, soy sauce reduction (so many secrets),  and fresh ginger.   Let it work a bit then add some of that roasted turkey, egg,  green onions, and leek strips.   Confuse the hell out of everyone when they want to know what it’s called.  Welcome to my world  Soooooooooooooooooooo […]

My sister and her husband invited me and Mindy over the other night. They were hungry, I cooked something.  I wasn’t going over there to cook in the first place but that’s what I do when people are hungry, I cook.  The difficulty with cooking at someone else’s house is that you don’t know what they do or don’t have.  The difficulty with cooking at your sister’s house is that she is the opposite of me.  She doesn’t cook at all […]

Seafood Phở

January 6, 2010 by ericriveracooks

Ingredients: The stock 1.75 gallons dungeness crab stock…..made it from […]

October 22, 2009 by ericriveracooks

I came back from Fresno and one of the first things I wanted to do was eat Pho. I have been hearing wonderful things about Boom Noodle so Mindy and I decided to make the trip over to Capitol Hill and visit the boomingest of noodle places! The atmosphere is nice and warm (I had some video but it was too dark to pick up the details…oh darn, I’ll just have to go again!!!) so we settled in and checked […]

Teriyaki Glazed Pork and Pineapple over Udon Noodles

August 13, 2009 by ericriveracooks

I’m starting to figure out how to use my camera so that way my pictures will start looking a lot better than usual. I wish I could go back and re-take a lot of the pictures on this blog because I know a lot of people are drawn in by the pictures and don’t really have any idea what the hell I’m making. It’s ok though, now that I’m starting to work on these pictures you can tell me how […]
