Fried Pork Chop with Fuji Apple Chutney and Veal Stock Orzo

May 11, 2010 by ericriveracooks

Think pork chops and apple sauce but with a few tweaks. TWEAK! There is a spice rub that I put on the pork chops that consists of turmeric, salt, aji dulce powder, cinnamon, grains of paradise, and urfa biber (What are things you can’t buy for $1000 Alex).  Then it’s fried! Before that started I worked on the fuji apple chutney.  It has a base of brown sugar, white wine vinegar, and fructose. I added a few spices once it […]

Fried Pork Chop, Scallops, and Aji Dulce Relish

April 16, 2010 by ericriveracooks

Ay papi! Pork chop brined in brown sugar and a few secret spices.  The scallops are salt brined then seared in clarified butter. The aji dulce relish is made with pimentos, pimenton dulce, and red bell peppers….it’s sautéed in a pan sauce I made when the pork chops were done frying….think brown butter…..think amazing. Eric…..powered by pork.

Fried Pork Chop, Yellow Rice, Avocado Puree, Pepper Medley, a night in Puerto Rico….

March 23, 2010 by ericriveracooks

Had a couple friends stop by the house on Saturday. It was supposed to be mojito/game night but we never got around to the whole game thing. It’s a guarantee now that if you come over I will cook, I can’t help it.  I need to terrorize my kitchen and work it to its limits and make sure that everyone who comes into my house is left satisfied. The people who came over have seen my cooking over the last […]

Bachelor Dude Food, Day 2: Annatto Seed and Coriander Crusted Pork Chop

May 9, 2009 by ericriveracooks

(Click each picture to make it larger) Pork Chops. They’re my favorite thing that my mom makes. She usually does a bone-in pork chop. I didn’t want to do a bone-in chop because I am going to Puerto Rico in a few days and I don’t want to cheat myself into thinking that I can duplicate her recipe. I know exactly how it tastes and I know how to make it but it’s different when Mom makes it. Thanks again […]
