Cookbook: Pork & Sons

August 27, 2010 by ericriveracooks

Pork is the best thing I can’t wait to be eating The next pork dish, yum. If there is ever a haiku open mic night then I’m ready. Pork makes me do all sorts of crazy things that I never imagined I would do.   You might go crazy when you see a picture of Justin Bieber (you’re weird).  You might go crazy when you hear about a sale at Nordstrom (bleh).  I go crazy about pork! “Eric, we know […]

Mangalitsa Leaf Lard Dough made into a Mangalitsa Pizza….that rhymes and it’s awesome too!

August 4, 2010 by ericriveracooks

Hmmmmmmm, that’s a pretty good looking dough. It’s doubled in size and it’s ready maybe I should…..STOP LEAVE IT THERE JUST WAIT………..Patience! That’s what you’re looking for.  An hour and a half or so later it starts to resemble the moon.  Don’t cook until you’ve landed on the moon with your dough (million dollar tag line). Ready to cook your dough?  Let’s make a sauce! Render some Mangalitsa speck, add some carrots, celery, onion, and cherry wood smoked tomatoes (oh […]

Mangalitsa Lardo New Potato Rustic Frittata

July 26, 2010 by ericriveracooks

It’s not a frittata in the traditional sense but I couldn’t come up with a better name so I just called it “rustic”….I see that a lot on menus.  I think it means “we just want to throw a bunch of things in a pan and not worry about it looking fancy”.  Well, I took all the components of a frittata and just cooked it differently……I’m confused now…..oh well. Take some lardo. Render it then cook then quarter some new […]

Mangalitsa Speck Penne and Cheese

July 26, 2010 by ericriveracooks

Base sauce is a heavy cream bechamel with a ton of Beecher’s cheese and some rendered fat from the speck. Seasonings are in play here but nothing more than salt, black pepper, and crushed red pepper.  Penne is cooked al dente then stirred in the sauce to finish….more speck is added to the mix.  Contents are removed from pan then placed in ramekin then more speck and cheese is placed on top.  Placed under broiler then brought out and torched […]

Mangalitsa Pernil Style Pulled Sandwich with Spring Greens and Pique Mayo

July 22, 2010 by ericriveracooks

I took a quarter of a Mangalitsa neck roll and did this to it. That’s why it’s awesome being Puerto Rican. Give me pork and it’s an instinctual thing I have to make it into something amazing.  I would love to tell you what I did to it but I’ll save that for my restaurant. Then I took the meat and seared each side.  Braised it in chicken stock, coriander, and annatto seeds for 8 hours.  Removed the meat, shredded […]

Mangalitsa B.L.T.

May 31, 2010 by ericriveracooks

If I owned a restaurant then this would definitely go on my menu for lunch. It might even be one of those things that I just have for a late-night menu that only a few chosen people know about (I like secrets). It’s a f’ing amazing sandwich and ridiculously easy to make but the ingredients are what make it amazing. It’s not just a b.l.t. The bacon is from Wooly Pigs. Heath breeds mangalitsa pigs that currently have the highest […]

Porking Out at Fresh Bistro: Mexican Theme

May 26, 2010 by ericriveracooks

A couple weeks ago I had dinner at Fresh Bistro and Chef Chea told us that he would be doing a weekly themed pig roast on Tuesday’s for $12.  Without hesitation I said, “F Yes, that sounds awesome, we’ll be there!!”.   Things have worked out beautifully since then and I even recruited a few abandoned Lost viewers that have nothing to do on Tuesday nights since their favorite show is gone (Watch Treme on HBO…..amazing). What’s going on Lost […]

Pulled Pork Veal Stock Orzotto

April 30, 2010 by ericriveracooks

Welcome to flavor country. If I opened a restaurant this would be a “special” item.  Something for those rainy, gloomy, and cold days.  Seattle, this dish is for you! I took some of that pulled pork that I made the other day that was already cooked in veal stock then added more and proceeded to reduce it slowly.  I added some tomatoes and then added the orzo and cooked it like a risotto.  Stirring, stirring, stirring, then a ton of […]

Fall Apart Pork Lettuce Wraps with Cilantro Lime Rice and Pickled Delights

April 25, 2010 by ericriveracooks

Read something, get inspired, make something your own.  I am obsessed with David Chang’s Momofuku book.  It’s given me a great jump start into the crazy world of pickling and he has taught me to never look back at the food I made a month ago, yesterday, or right now.   He talks about how people question his motives for putting out his secrets in a cookbook and he simply responds by saying he’s going to move forward….good stuff. Well, he […]
