Scallops & Potatoes, Version 1.0

July 2, 2011 by ericriveracooks

The scallops I bought from a store were absolutely atrocious, nothing close to the ones I get in the restaurant.  I need to nail the size of the potato and scallop.  Honey comb in the middle is nice and the muscat/orange vinaigrette was nice as well.   Buy better scallops and fix potatoes then there might be something here. Scalloped Potatoes…..I never had them until about a year or so ago……I thought I was going to get scallops and potatoes…..I was […]

Patatas con Chorizo

June 7, 2010 by ericriveracooks

I just bought a book that will be my foundation for the way I will cook forever.  I’m not going to say what it is but it’s a fantastic resource and a great source of inspiration for me.  I look at the recipes in the book and they are very basic then I take what I have learned so far and elaborate upon it. The recipe starts out featuring potatoes and chorizo….simple enough and great but I like to tweek […]

Grilled Lamb Chops with Bell Pepper Relish, Confit of Potatoes, and Brown Butter Broccoli

May 4, 2010 by ericriveracooks

The picture doesn’t show the broccoli with the sauce on it….I guess I’ll just have to make this again!! Again, this was at my sister’s house. I had no idea what she had there so I think things turned out great!  Grilled lamb chops are f’ing amazing especially when they are seasoned with fresh rosemary, Himalayan pink salt (yeah, I was surprised she had that), and black pepper. The potatoes, awesome.  The broccoli, awesomer.   Then top it all off […]

Confit of Fingerling Potatoes with Gravy and Beecher’s Flagship. A.K.A POUTINE!!!

February 19, 2010 by ericriveracooks

HEART ATTACK TIME!!! Whew, it was only a small one that time. Yeah, this is one of those things you don’t want to eat very often.  This is my answer to all those people who have “health” blogs that continue to preach the ideas of health and in the meantime they have banners and ads on their site for the most unhealthy garbage you’ll ever see. I make no such health claims, I want you to eat whatever you want….as […]

Roasted Chicken Halves on Leek, Carrot Bed with Herbs De Provence Potatoes with Pickled Mustard Seed Pan Gravy

January 17, 2010 by ericriveracooks

Mindy’s dad is in town and we rarely get to see him. She told me he really likes chicken so I decided to put on a little show.  Oh, he also brought me a bunch of cast-iron pans so I had to put them to the test! The pan gravy isn’t pictured but it was a monster sauce, so many textures and layers to it….actually, everything in this dish had a lot of textures and layers.  The pickled mustard seed…..David […]

One of my goals for 2010 is to create 30 sauces. It’s not over 1,000 like Escoffier but I think I can get there one day. This mimosa sauce is fantastic and while I won’t share the details of the exact measurements, I will share the ingredients.  My f’ing hand is killing me right now so I’ll make this quick. Ingredients: Hash Russet potatoes, grated Clarified butter Bacon fat Salt and pepper 26 month old Gouda Cheese……don’t wake up and […]
