Wine Time: Lighter-Bodied Reds

May 4, 2010 by ericriveracooks

2009 Domaine Sorin Cotes de Provence Rose (France) Another week in wine class brings me into the universe of lighter-bodied reds.  I didn’t know what to think about these going in but I do like the rose wines, especially with bubbles!   This rose was much better than the one I purchased a few weeks ago.  It had a nice tangerine smell to it and had a nice salty/mineral taste to it that would be great with shellfish or even […]

Puttanesca Pasta

December 29, 2009 by ericriveracooks

(Serving things family style doesn’t really make for great pictures………….oh well) The sauce made for whores……not kidding.  Anyway, here is my take on puttanesca pasta.  The original idea behind this pasta was that you use what you had available around the house and then made it for whores. I don’t know any whores but I do have a few things lying around the house.  The times I have had this there were three flavors that stood out to me…..kalamata olives, […]

Braised Oxtail

October 30, 2009 by ericriveracooks

Oxtail is awesome. If you have never worked with it then this is the time to do it. There are so many possibilities with this piece of meat and it’s pretty hard to mess it up. Start by buying some oxtail then trussing it if you are going to braise or stew it….like this! Truss it or else your meat will fall off the bone into the stew or braise. It’s not the worst thing that could happen but when […]

Beef Wellington with a Prosciutto Reduction Sauce

September 23, 2009 by ericriveracooks

I’ve been visited a few deli’s lately so I wanted to take little bits and pieces from each store and put together a meal. I think a Beef Wellington is a meal in itself so there is no need for other unneccessary starches or vegetables…..it was stuffed with mushrooms and it has a nice puff pastry so there you go. The sauce for this is a monster and I actually licked my plate when I was done. This is restaurant […]

Red Red Wine Clams (stay close to meeeeeee)

May 13, 2009 by ericriveracooks

(Click each picture to make it larger, I recommend picture #3) Drool. Ingredients: 2 lbs. clams           (I forgot the name of the clam I used, they’re freaking huge) Leftover juice from the bacon wrapped scallop recipe  (CLICK) 1 1/2 cups Shiraz Wine In a large skillet on med-high heat combine all the ingredients and cook clams until they open! Never cook a clam that is open, it’s already dead and will make you sick. Enjoy, Eric
