Fermentation Projects: Rice Wine

January 3, 2012 by ericriveracooks

I was at a store one day and I noticed those packages of dry yeast.  I had no idea what to do with them and bought them anyway because they were cheap.  When I got home I did a little research and now I’m in the rice wine making business, well nobody is buying and I’m not selling so I’ll just continue my private label activities. Pickled Red Chili Pepper/Honey Glazed Chicken and more…..

October 4, 2010 by ericriveracooks

Here’s a little of what’s going on here. I did a soy/ginger/shallot/sesame seed sous vide of some of Mindy’s carrots and some green beans. I brined the chicken in rice vinegar, sugar, and ginger.  I removed the chicken from the brine then did a hard sear of the skin then through it in the oven and basted it with a pickled red chili pepper and honey glaze that I made. When then chicken was about to be finished I through […]

Sardine, Tomato/Piquillo Pepper Sauce, Black Bean Puree, Herb & Preserved Lemon, and Rice

September 22, 2010 by ericriveracooks

I’ve eaten this dish a thousand times.  When I was growing up this was something that my dad would make quite often.  My dad didn’t cook much so things were simple.  He would take a can of sardines that came with a tomato sauce included with it then he would make some white rice and in about 10 minutes dinner!  I loved it and to this day it’s one of those dishes I talk about that can take me back. […]

El Pilon (Seattle, WA)

June 30, 2010 by ericriveracooks

It’s nice to have a go-to restaurant that you can go to that feels like home.  My parents live in Puerto Rico so the only chance I have to eat some good home-style cooking is El Pilon in Seattle. It’s not fancy, it’s not expensive, but it’s just great.  Ms. Vega is my adoptive culinary mom and she cooks for me whenever I feel like some good home cooking at her restaurant, El Pilon Meat empanadas with a fantastic chili […]

Roasted Chicken with a Mango/Togarashi Glaze with Ginger Rice and Yellow Bell/Carrot Topper

May 6, 2010 by ericriveracooks

I had some of that honey mango puree leftover from the scallop “carpaccio” so I decided to make it into a glaze to put on some chicken.  ”Wow Eric, you’re like McGyver in the kitchen without things going all explody time. The glaze started off with a little chicken stock then I reduced it, added togarashi, added cornstarch then finally added the honey mango puree.  I used the glaze on the chicken and to cook the carrots and yellow bell […]

Fall Apart Pork Lettuce Wraps with Cilantro Lime Rice and Pickled Delights

April 25, 2010 by ericriveracooks

Read something, get inspired, make something your own.  I am obsessed with David Chang’s Momofuku book.  It’s given me a great jump start into the crazy world of pickling and he has taught me to never look back at the food I made a month ago, yesterday, or right now.   He talks about how people question his motives for putting out his secrets in a cookbook and he simply responds by saying he’s going to move forward….good stuff. Well, he […]

Fried Pork Chop, Yellow Rice, Avocado Puree, Pepper Medley, a night in Puerto Rico….

March 23, 2010 by ericriveracooks

Had a couple friends stop by the house on Saturday. It was supposed to be mojito/game night but we never got around to the whole game thing. It’s a guarantee now that if you come over I will cook, I can’t help it.  I need to terrorize my kitchen and work it to its limits and make sure that everyone who comes into my house is left satisfied. The people who came over have seen my cooking over the last […]

Ropa Vieja

Ropa Vieja

January 20, 2010 by ericriveracooks

A friend of mine, Valerie, asked me if I could come up with a recipe for Ropa Vieja.  It’s a dish that’s tossed around the Hispanic community from culture to culture. Every recipe I have seen has different ingredients and methods behind the madness for these “old clothes”.   One of the things that I saw remained constant was the braising of the meat, pulling it apart, then placing it back in the braising liquid. I had the basic idea of […]

Braised Baby Bok Choy in Red Curry Sauce with Rice

January 16, 2010 by ericriveracooks

F’ing clumps….forgot to stir the coconut milk before throwing it in…..ugh. Anyway, this is the second time I’ve made this on the site and I want to do it once more with a lot more flair. I was working on the sauce this time and I think I have the right mix now.  Braising the bok choy in the sauce gives it a whole new flavor and texture te only thing I need next time is to clean up that […]

Christmas is the next day since the family is all here….

November 27, 2009 by ericriveracooks

Well, if that’s the case then let me throw a few things together!  We celebrated Christmas Eve with the family today so I pulled out a few more tricks out of the bag.   Puerto Rican style pork loin, stuffed bell peppers, and yellow rice! That’s how I do Christmas with my parents so it was easy to make it for Mindy’s family. Stuffed Bell Peppers with Mom’s stuffing Yellow Rice with Garbanzo Beans I loved reading other blogs about how […]
