Roasted Chicken with a Mango/Togarashi Glaze with Ginger Rice and Yellow Bell/Carrot Topper

May 6, 2010 by ericriveracooks

I had some of that honey mango puree leftover from the scallop “carpaccio” so I decided to make it into a glaze to put on some chicken.  ”Wow Eric, you’re like McGyver in the kitchen without things going all explody time. The glaze started off with a little chicken stock then I reduced it, added togarashi, added cornstarch then finally added the honey mango puree.  I used the glaze on the chicken and to cook the carrots and yellow bell […]

Roasted Chicken Halves on Leek, Carrot Bed with Herbs De Provence Potatoes with Pickled Mustard Seed Pan Gravy

January 17, 2010 by ericriveracooks

I worked earlier in the day so I had to rush a little bit in order to have the first plate out by 6:30 but it’s no problem because all I do at work is prep so prepping at home was easy! There were a few components I started a […]

Roasted Grapes and Nectarines

October 18, 2009 by ericriveracooks

This is my second time roasting grapes. The first time I did it I had the temperature too high and cooked them too long so I ended up with charcoal grapes, not fun and/or exciting.  My intention with the grapes is to use them for a much larger plate I have in mind……holidays……….yup. The nectarines were thrown in because any type of stone fruit is great for roasting, grilling, and just about anything. I had a few extras lying around […]
