Life at 40,000 BTU: Chef Kevin (Blueacre Seafood) sends me to Pacific Seafood

October 7, 2010 by ericriveracooks

I was talking with Chef Kevin one day about how I wanted to hone my skills in cutting fish.  He didn’t hesitate and said he would send me to Pacific Seafood so I could learn from the best…..perks, I have them. Pacific Seafood is the largest distributor of seafood in the nation.  I went to their distributing and processing plant in Mukilteo for a few days and while I don’t have any pictures of the inside of the plant I […]

Dinner, My Place…..This time it’s serious! (awesome sequel title!? Ok, not really)

September 17, 2010 by ericriveracooks

Heirloom tomato, frisee, red onion (MRF), kalamata olives, pickled brown mustard seeds, maple syrup vinaigrette, Redmondo cheese (click). My sister just came back from Napa and had fried green tomatoes for the first time. I said I could make a better batch with green tomatoes from MindyRiveraFarms. After a little seasoned Beecher’s cheese, my own pique on a plate, and a little standard frying technique for fried green tomatoes I dazzled them with this. My sister brought over some wild […]

Bite of Mud Bay Cooking Demonstration

September 13, 2010 by ericriveracooks

I was asked to cook up a few things for the Grand Opening of a store called Mud Bay.  They cater more to the four legged friend variety so they asked me to use ingredients normally found in their pet foods in order to feed some people at the event.  No problem! After a little back and forth with emails I decided on a dish that would incorporate a lot of the things I like to make as well as […]

Wild Alaskan King Salmon Pasta

June 7, 2010 by ericriveracooks

Was given some salmon trim from work so I decided I would take it home and create something spectacular.  This is the best salmon you’ve never had……that’s right……Mindy said so Golden Glen Creamery’s basil cheese, Beecher’s cheese and some Golden Glen Creamery Butter then some heavy cream.   Wild alaskan king salmon, sel de mer, black pepper, white wine, capers, homegrown tarragon, and some spaghetti noodles…….all of these ingredients are out of order…it’s your job to experiment and unlock the awesomeness […]

Seafood Practical

May 19, 2010 by ericriveracooks

We were given a couple recipes in class that we had to follow but the rest of what happened was up to us. The theme was to be a NW Seafood Buffet but I hate the word buffet so we made the decision to make our plates look like smaller appetizer plates.  We went to the library and did a little research then I drew up the ideas for what was going to go with what then went off the […]

Togarashi Wild King Salmon Gravlax

April 14, 2010 by ericriveracooks

About a week ago I was given these pieces of scrap from work.  The pieces are too small to serve and are usually made into a gravlax, but not like this! I learned how to make gravlax in class and at work but it seemed a little tame to me….IT NEEDS A LITTLE FIRE!!!! In steps my new friend Togarashi.  A 7 flavor spice blend hailing from the beautiful country of Japan (never been but I’ve eaten a lot of […]

Low Temperature Steamed Wild Alaskan King Salmon with Green Garbanzo and Gouda

April 9, 2010 by ericriveracooks

Serious writing voice…… I have been reading a lot about different ways to cook fish.  One way was through a Tom Colicchio book and he talked about a technique he learned from Michel Bras.   Michel Bras….Yeah, I’ll try it.  The problem, he didn’t really explain how to do it so I had to do a few test runs…..good thing I have these pieces of trim from work that were given to me! Baking sheet, cooling rack, water.  I added a […]

Kasu Marinated Sockeye Salmon, Ginger Potato Chips, and Baby Bok Choy Bottoms with a Soy Sauce Chili Reduction Sauce

April 6, 2010 by ericriveracooks

I cooked something, made changes, and then made it my own.  I loved the Kasu marinated sockeye salmon that was inspired by Steelhead Diner but I wanted to make one simple concept from it, the Kasu,  my focus.  It’s a fun mix of ingredients to work with  so I let the sockeye marinade for a few days. Going back I would keep the marinade from 8-12 hours, but  I still got my point across. The bok choy was steamed in […]

Blackened Sockeye Salmon with Dill Buerre Blanc and Steamed Vegetables

January 1, 2010 by ericriveracooks

This is a major work in progress. Once again, the flavor is all there….. I just have to work on the look of it all.  The technique I used to steam the vegetables was awesome!  Also, I took the top off of the salmon after it was blackened…….I have a reason for this but it didn’t work out the way I wanted to…..until next time! Cedar Planked Salmon with Persimmon Duxelle and Wine Poached Potatoes

November 13, 2009 by ericriveracooks

I learned how to do cedar planking in class the other day so I figured I would give it a shot at home. I talked to my Chef and asked him all the tips and things I should expect and I was off! This is version 1.0 of this and I will be doing this another time before I make this in Ohio for a catering gig during Thanksgiving (yup, it’s a big one). I don’t make it out to […]

Buerre Blanc Sockeye with Caramelized Sprouts and a Pecan Compound Butter Bread

October 31, 2009 by ericriveracooks

My roommates said this was the best salmon they have ever had. I take that as a huge compliment but it all has to do with the quality of the fish. I’m not kidding when I say this, I have a direct link to the best sockeye out there and it’s awesome! Ingredients: Sockeye salmon rubbed with parsley infused salt and black pepper Brussels sprouts vichy (click for recipe) Compound butter on pecan bread (click for recipe) Procedure: Pan sear […]

IxaRiveraCooks: Baked Salmon ala Rivera with Cous Cous

October 16, 2009 by ericriveracooks

Take it away Mom: “Here is the salmon I fixed following your recipe (click).  The only thing is that I didn’t have the truffles or the beets, but I followed the rest of the recipe for the flavor.  I added onions and red peppers.  Great vinaigrette.  It was delicious. Keep the good work in school. We are very proud of you. LYA, Mom & Dad Ixa
