Mangalitsa Pernil Style Pulled Sandwich with Spring Greens and Pique Mayo

July 22, 2010 by ericriveracooks

I took a quarter of a Mangalitsa neck roll and did this to it. That’s why it’s awesome being Puerto Rican. Give me pork and it’s an instinctual thing I have to make it into something amazing.  I would love to tell you what I did to it but I’ll save that for my restaurant. Then I took the meat and seared each side.  Braised it in chicken stock, coriander, and annatto seeds for 8 hours.  Removed the meat, shredded […]

Paseo Caribbean Restaurant (Seattle, WA)

July 6, 2010 by ericriveracooks

I’ve heard nothing but great things about Paseo’s sandwiches.  If you have been paying attention on here you can probably tell that I love sandwiches. I’m almost to the mind-set that food won’t taste good unless it’s in between two pieces of bread…..well maybe that’s being a little dramatic but I’m right!!! Mindy and I made our way down to the Fremont location of Paseo over the weekend and decided to try out a couple of their finest sandwiches.  The […]

Delicatus (Seattle, WA)

May 26, 2010 by ericriveracooks

My search for great deli’s in Seattle continues. So far I have been to a few that I will recap when I finish my list but it has been a great journey so far.  In between the time of making my list and running around Seattle with school, working, and doing this blog thing a new deli has opened up in the heart of Pioneer Square.  I have been waiting to go for a few weeks now and I finally […]

This week in Garde Manger: Sandwiches and Salads

April 28, 2010 by ericriveracooks

Made a whole bunch of salads and sandwiches this week in class.  I found a square molding in the plate room so I ran back to my table and used it on this Cobb salad with a honey creole mustard vinaigrette.   Cobb salads are pretty awesome but I get tired with classic presentations so this square molding was pretty bad ass to work with. Here is one of my favorite sandwiches out there,  The Muffuletta. I used to eat […]

Duck Egg McAwesomewich

March 5, 2010 by ericriveracooks

Stop reading and look at the picture again. Yeahhhhhhhhhhhhhhhhhhhh. Ladies and gentlemen, welcome to flavor country.  Take a duck egg and cook it in duck fat like so. Cook some pancetta and use the fat to cook some caramelized onions like so. Then take a 7 grain onion bagel, cut it in half, toast it then add a tiny bit of emulsified fried parsley oil and white wine vinaigrette. Place the pancetta on top along with the caramelized onions then […]

Pancetta Demi-Baguette Sandwich with Pickled Delights, Sauteed Onions and Yellow Bell Peppers

February 21, 2010 by ericriveracooks

This sandwich has a little bit of everything and while it may seem there is too much going on the flavors compliment each other in such a great way. I made my way to the farmers market and picked up some  pancetta and then brought it home then sliced it up in order to lightly cook it.  This is an easy way for me to salt something without having to add a bunch of extra salt, also the fat that […]

February 4, 2010 by ericriveracooks

On a scale of 1 to 10 I give this sandwich an Eleventy!!!11!!!!!!!1!!!!   We’re in the process of packing crap up so that involved getting rid of/eating as much stuff in the refrigerator I could so I didn’t have to move it.  I used some leftover braised short rib meat, pepperjack cheese and 6 quail eggs with a a touch of salt and pepper…simple and awesome.  I made another sandwich that I gave to Mindy but I didn’t take a […]

United Way of King County’s Hunger Action Week: ?.L.T.

January 27, 2010 by ericriveracooks

Fried egg with lettuce and tomato, lettuce and tomato, mayonnaise with lettuce and tomato; this sandwich doesn’t quit! Take some bread, add some lettuce and tomato then let your mind go wild with different ways to dress this up.  I’ve eaten this sandwich four times now and it’s getting to the point where it’s routine and I don’t even think about making it anymore. I had some visitors today at my house today so we’ll see how that turns out. […]

Audrey’s Vegetarian French Dip

November 2, 2009 by ericriveracooks

My roommate Audrey made this sandwich yesterday. I thought it was worth a post because it tasted pretty damn good. It doesn’t beat a real French Dip but it certainly is a good substitute for those non-meat eaters. Ingredients: Portobello mushrooms……large and small Soy sauce Cornstarch Onions, caramelized Bread Black pepper, tt Provolone cheese Olive oil Salt Procedure: Take a medium sauce pan and pour in 3 cups of water and a few small mushrooms then simmer for an hour […]

Pastrami Sandwich

August 23, 2009 by ericriveracooks

I love sandwiches. I’ve always wanted to create my own signature sandwich so I am starting the process of doing that. Of course  it won’t be just one sandwich, it will probably be 20 different sandwiches. This Pastrami Sandwich is awesome and I will definitely be adding this to the list of signature sandwiches. I’ll leave the ingredients for you but I’m keeping the techniques in my back pocket. Ingredients: Pastrami Cheese Black Olives Red Bell Pepper Tomato Mushroom Awesome! […]

(Click each picture to make them larger, they’re not very good…I had to resort to my blackberry camera phone) I’ve said it before and I’ll say it again…..Salumi cured meats are the best I’ve ever had (CLICK FOR OTHER POSTS). I stopped by their store today and picked up a fantastic sopressata with melted mozzarella, onions, and peppers. Yum yum yum. If you’re ever in Seattle then make it a point to stop there!
