Lanvin Dinner
I did a dinner inspired by the designer Lanvin yesterday. It was a 5 course meal that I created for the person that won the golden ticket for a charity event a few months ago. The first dish you see is the “runway”. The runway is fromage blanc with powdered black olive mixed in. Concasse of heirloom grape tomatoes, broken vinaigrette, cilantro, frisee, and watercress. The next courses were inspired by the looks from the Summer 2011 collection. […]

My Parents Were In Town……We Ate A Few Things.
Hey look, it’s my parents. They were in town for about a month so things have been a little quiet here on the blog but that doesn’t mean we weren’t up to a bunch of cool things. In that picture we were eating brunch at Cafe Flora. I had originally intended us to eat brunch at Luc but I was off by a day….that happens a lot these days. It’s ok though because brunch was delicious and Mindy had this […]

Life at 40,000 BTU: The Stations- Saute
I’ve taken you through the stations I have worked so far at Blueacre Seafood with Fry (click) and Hot Appetizers (click) being the two stations that I have become proficient at. One of the goals I had for working at Blueacre was to make my way up to working the saute station. That day is here! In 5 months I have worked my way to the top spot on the line…..it feels pretty good to say that so I’ll say […]

Dinner, my place. Seafood Extravaganza
Practice makes perfect! Had some friends over the night for dinner and since I have one night a week to cook dinner at home I went all out. A couple dungeness crabs as you can see above. Some spot prawns. A collection of fun things from Mindy’s garden. and off to work I go. First up was Kumamoto Oysters with sauce Mignonette and a Japones Chili Oil Vinaigrette that was infused with green onions using Nitrogen Cavitation. Next up was […]

Seafood Stew Blanco
This is a take on cioppino. It’s from a late-night cooking session at my house a few nights ago. I’ve been in the dark from the internet lately because there have been server problems with my ISP…..exciting. I like cioppino and seafood stews with tomatoes in them but I wanted something lighter so off to the stove I went. Obviously it could use a bit more variety in the seafood but it’s all I had available at the time. […]

Bacalao and Bacalao Fritters
Bacalao…….salt cod…..or as Mindy calls it, “Oh my God, that smells awful”. I love this stuff, I grew up on it. When properly handled it turns into an amazing fish dish that you can enjoy anytime of the year. I was reading Michael Ruhlman’s Charcuterie book and he talks about the origins of salt cod. The Viking’s used to air dry it on their ships and the salt of the sea air would cure it as they went around and […]
