2AM Meals…..

August 2, 2010 by ericriveracooks

I’ve been working a lot lately and doing the whole school thing as well.  5 days at work….Thursday-Monday…then school is Tuesday-Wednesday.  Where can I fit in this blog thing?  Don’t worry Mr. Blog, you’re taken care of. I get off of work at around midnight. I race home and I’m still amped up and I want to improve my techniques that I learned at work or just reflect or answer questions I have in my own head so then I […]

Getting ready for Blueacre. Butter Poached Gulf Shrimp and Crab Cakes

June 25, 2010 by ericriveracooks

I was in Anacortes the other day and I stopped into a seafood market called Blackrock Seafood.  They had a great selection of fresh seafood so on my way home I called Mindy and gave her a quick grocery list so I could practice some of the menu items at Blueacre at home. I’m the type of person that strives for perfection and I know that it takes a lot of work and practice to get there and even after […]

Seafood Stew Blanco

June 19, 2010 by ericriveracooks

This is a take on cioppino.  It’s from a late-night cooking session at my house a few nights ago. I’ve been in the dark from the internet lately because there have been server problems with my ISP…..exciting. I like cioppino and seafood stews with tomatoes in them but I wanted something lighter so off to the stove I went.   Obviously it could use a bit more variety in the seafood but it’s all I had available at the time. […]

Seafood Practical

May 19, 2010 by ericriveracooks

We were given a couple recipes in class that we had to follow but the rest of what happened was up to us. The theme was to be a NW Seafood Buffet but I hate the word buffet so we made the decision to make our plates look like smaller appetizer plates.  We went to the library and did a little research then I drew up the ideas for what was going to go with what then went off the […]

Shrimp, Soba, Black Beans

May 11, 2010 by ericriveracooks

I’ve been drawing a few things lately.  Normally I would just cook these ideas on the fly but I’ve been busy so things have slowed down a little bit.  I have a little more time to think about the next dish.  I’m not sure if this is a good or bad thing but the first version of this dish is definitely moving in the right direction. You can see what I wrote above and it’s a pretty complex dish but […]

Hamachi Miso Broth with Light Seared and Steamed Seafood

April 23, 2010 by ericriveracooks

It’s a combination of this (click) and this (click) but taken to the next level. I refined the broth to be a little more clear.   I’m not done with this dish yet.  You can see a little about what I’m talking about in the top right of the picture.   It’s part of my never ending fascination with hot & cold dishes. Next! Eric

Etouffee

March 23, 2010 by ericriveracooks

SHRIMP ON A BOAT!!! I made some etouffee for my sister and her husband on Sunday.  Started by rendering some tasso, mango jalapeno sausauge, and bacon then removing that and sauteeing the “holy trinity”.  Built a brown roux, then poured in lobster stock and placed the meat back in.  Adjusted the seasonings then let it simmer for a bit. Added the rice, adjusted seasonings again then cooked the shrimp off then served it in a bowl with the shrimp as […]

Seafood Linguine

March 13, 2010 by ericriveracooks

Lots of cool stuff happening with this one.  A little Cucina Fresca linguine mixed with a whole lot of awesome. I took tomato paste then did a little French style pince to it.  Pour olive oil in then fried it then added minced garlic, red bell peppers, sweet onion, celery and proceeded to sweat them out.   Deglazed with red wine, reduce to almost no liquid then added a lobster stock, large beefsteak tomato, thyme, anchovy filets, minced crab meat, black […]

Meyer Lemon Shrimp Ceviche with Jamon Iberico, Bell Pepper Medley, Pique Vinaigrette, and Other Fantastic Things

March 5, 2010 by ericriveracooks

Looks pretty damn cool right?!?!?!  Mindy bought me some new plates at TJ Maxx.  They were $2.99 a piece and they’re perfect!!! I’m in the middle of a billion posts right now so I decided to celebrate my 1000th post with a little toast to this crazy blog. I’m looking at this picture and I’m in a little state of disbelief and before you say, “get over yourself” like those Seattle PI commenters do frequently (delete button is awesome),  I […]

February 25, 2010 by ericriveracooks

I f’ing love pasta and shrimp day. I need to go to Puerto Rico…..  Take it away mom! “Hello boy! Today was one of those busy days. All I wanted was to hurry up,  get home and fix something quick, fresh and yummy.  Well, while I was driving I said to myself, “it is pasta and shrimp day”.  Here is the finished product. All the herbs are fresh from my garden and of course the aji dulce. “ LYA, Ixa
