Grape Tomato on Fire!

May 15, 2011 by ericriveracooks

Thanks to Scott for taking the pictures (click)! This is a grape tomato concasse.  The skin is left on and pulled up in order to give it the effect of fire when the photo was taken.  I saw this in Michel Bras’ book, he roasts them as well which gives a pretty awesome effect as well. While Scott was over we tried another effect of dropping flowers which worked pretty well and with a little more time I think we’ll […]

Clams and Mussels!

September 22, 2010 by ericriveracooks

I love clams and mussels.  I think they compliment each other beautifully and they look amazing when paired up on a plate together.  I get a lot of practice cooking clams and mussels at work so what do I do when I have a day off?  I make clams and mussels because they’re that awesome. MindyRiveraFarms has a lot things for me to play with so I ran outside and grabbed these three items to help this dish explode.   […]

Roasted Tomato Powder

April 14, 2010 by ericriveracooks

“Eric, that doesn’t look like powder.”  Stop interrupting me, voice(s) in my head.  Once I throw it in my spice grinder you’ll stop interrupting me then I’ll show you!!!! You know when you make a puree of some sort then strain it and then you take the juice and make a roasted tomato saffron broth with hamachi (click)? Oh, you don’t do that?  Damn!  Well, next time you strain something take the strained pieces then lay them flat on a […]

Puttanesca Pasta

December 29, 2009 by ericriveracooks

(Serving things family style doesn’t really make for great pictures………….oh well) The sauce made for whores……not kidding.  Anyway, here is my take on puttanesca pasta.  The original idea behind this pasta was that you use what you had available around the house and then made it for whores. I don’t know any whores but I do have a few things lying around the house.  The times I have had this there were three flavors that stood out to me…..kalamata olives, […]
