Dinner, my place: Puerto Rican Food

November 3, 2010 by ericriveracooks

Had a chef over for dinner on Monday night.  It was my first time cooking food in my house for a chef so it was a really nice experience.  I started the party off with salt cod fritters with a trio of sauces.  The sauce on the left is the first sauce I ever made…..mayo-ketchup. It’s a standard sauce in Puerto Rico and it’s just a mixture of ketchup and mayonnaise!  I made the mayonnaise so it’s not the typical […]

My First Cooking Demonstration!

August 6, 2010 by ericriveracooks

Wait, someone else is taking pictures??? Thanks Mindy!  The debut of a new food blogger! I have been studying cooking demonstrations for over a year in the hopes that someone would ask me to do one.  I have seen Nick Stellino rock a stage like no other, I have been part of a demonstration as an assistant during last year’s Festa Italiana (click),  I have seen The Chef In the Hat and Ethan Stowell work seamlessly together and feed off […]

Braised Mangalitsa Leg with Accompanying Homegrown Lettuce Wrap Party

June 16, 2010 by ericriveracooks

Mindy’s lettuce was ready to use so I decided to throw it a lettuce wrap party……it’s a wrap….get it?!?! No??? Ugh…I’ll be in the kitchen if anyone needs me. I pulled out my mangalitsa leg and proceeded to braise it up! Look at how much fat is on the outside edges!!!!! Awesome!!  If you ever see a recipe that says, “trim off excess fat”, throw that crap away and come back to my blog and I will show you the […]

IxaRiveraCooks: Take pictures of the food but none of me without make-up

March 13, 2010 by ericriveracooks

My mom’s posts are the best.  She has ripped on the United States Postal Service, the country of Egypt, and people with no respect for food.  Other things that she doesn’t like?  Pictures of her without her make-up or hair being perfect.  My mom is awesome. She has been on fire lately and I think I might have to build her a blog…..she’s the Puerto Rican Martha Stewart….Marta E-Stewart….or something like that (comedian I am not). My mom is a […]

Ropa Vieja

Ropa Vieja

January 20, 2010 by ericriveracooks

A friend of mine, Valerie, asked me if I could come up with a recipe for Ropa Vieja.  It’s a dish that’s tossed around the Hispanic community from culture to culture. Every recipe I have seen has different ingredients and methods behind the madness for these “old clothes”.   One of the things that I saw remained constant was the braising of the meat, pulling it apart, then placing it back in the braising liquid. I had the basic idea of […]

Deviled Ham Plantain Cups with a Mango Pineapple Sauce

May 25, 2009 by ericriveracooks

(Click each picture to make it larger) I made this on the final evening for my parents in Puerto Rico. Instead of using a green plantain I used a yellow plantain for a much sweeter taste. Also, I used the leftover meat from the pork pinchos recipe from the day before which turned out to be a perfect fit for this. Ingredients: 2 ripe yellow plantains 1/2 lb cooked pork, ground in a food processor            (use my recipe) Mango Pineapple […]

Breadfruit Tostones

May 24, 2009 by ericriveracooks

(Click each picture to make it larger) Breadfruit or Mapen as it is called in Spanish is something that I never used before to cook with. It’s a great substitute for a potato and it’s very healthy for you, well, until you deepfry it! You can also bake it or boil it so it’s pretty darn versatile. If you can find breadfruit at your local grocery store then try these tostones first. Ingredients: 1 breadfruit Canola Oil for deep fryer […]
